Imitation Crab Meat and Corn Soup

Ingredients

  • 1 c Coleson's Catch Imitation Crab Meat Salad Chunks
  • 4 c Chicken Broth
  • 1/2 c Green Onion chopped
  • 2/3 c corn
  • 1 Tsp Thyme
  • 1/2 Tsp Black Pepper

Instructions

  • Put all ingredients in a saucepan and bring to a boil. Makes for an easy, light refreshing meal.

Imitation Crab Meat Chunks with Coconut Milk and Rice Salad

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Imitation Crab Meat Chunks
  • 1/2 c raisins
  • 1/2 c Pineapple diced
  • 1 c converted rice
  • 2 c Coconut Milk
  • 1/2 tsp Ground Allspice
  • 1/2 c Green Onion chopped
  • Salt and Pepper
  • 1/2 Red Onion diced
  • 1/4 c Lime Juice
  • 1/2 c generic oil
  • 1/2 c tasted sliced almonds

Instructions

  • In a covered saucepan cook the rice in the coconut milk, allspice, green onion, salt and pepper.
  • Fluff and let it cool.
  • Mix diced red onion, lime juice, oil, salt and pepper.
  • Flake the crabmeat and mix all ingredients except almonds.
  • Chill over night.
  • Put the almonds on top of the dish right before eating.

Calamari Steak with Bacon and Sweet Potato

Servings 2 People

Ingredients

  • 1 pkg. Coleson's Catch Calamari Steaks thawed
  • Flour
  • 8 strips Bacon
  • 1 c Sweet Potato peeled, diced cooked - I like it roasted in the oven but it can be boiled
  • 1/2 c Onion diced 
  • Salt and Pepper
  • 1/4 c Green Onion chopped

Instructions

  • Cut the bacon in to 1 inch strips. Saute until crisp.
  • Strain the bacon out of the fat and set aside. 
  • Saute onion in the bacon fat and strain out.
  • Dry the calamari steaks in a paper towel. Season with salt and pepper.
  • Dust with flour. 
  • Saute Calamari steak in the bacon fat very lightly - only a minute or two on each side as it tends to get tough if over cooked.
  • Set the Calamari steak on the serving plate. 
  • Toss the hot sweet potato with the bacon, sauteed onion and green onion. Adjust seasoning.
  • Pour mixture over Calamari and serve.

Notes

Suggested side dishes would be sliced tomato, hot broccoli or salad.

Ahi Tuna with Watermelon, Red Wine Vinegar and Black Pepper

Ingredients

  • 1 pkg Coleson’s Catch Ahi Tuna
  • 1 cup Watermelon Diced
  • 2 Tbsp Red Onion diced 
  • 2 Tbsp Green Onion sliced
  • 2 Tbsp red wine vinegar
  • 1/2 tsp Tellicherry Black Pepper
  • 1/4 tsp Salt

Instructions

  • Toss the non-fish ingredients in a bowl.
  • Cook the tuna any style - I like char rare.
  • Top with the melon mixture.

Notes

Serve with a nice salad, such as spinach.

Braised Swordfish with Pomegranate and Pears

Ingredients

  • 4 pieces Coleson's Catch Swordfish Steaks
  • 1/2 c Green Onion diced
  • 1/3 c pomegranate juice
  • 1/3 c red wine
  • 1 Tbsp Orange Zest
  • 1/4 c chopped fresh mint
  • 1/4 c Honey
  • 1/2 tsp Allspice
  • 2 c peeled sliced firm pear
  • Salt and Pepper

Instructions

  • Salt and pepper the swordfish and sear in hot oil to brown both sides.
  • Place into a glass-baking dish and top with the pear slices.
  • Bring the remaining ingredients to a boil and pour into baking dish, cover and bake for 20 minutes in a 400 degree oven.
