Swordfish With Corn Cakes and Black Bean Salsa

Ingredients

  • 8oz. Coleson's Catch Swordfish Steaks 1 per person
  • Marinade:
  • 1/4 c. White Wine
  • 1/2 tsp. Salt
  • 1/2 tsp. pepper
  • 1 Tbsp. olive oil
  • 1 Tbsp. Cilantro
  • 1 tsp. garlic chopped
  • Corn Cake Batter:
  • 3 eggs
  • 1 c. Half and half
  • 2 Tbsp. Onion finely diced
  • 1/2 tsp. Salt
  • 1/2 tsp. pepper
  • 1/2 tsp. Cumin
  • 1/2 tsp. Chili Powder
  • 1 tsp. baking powder
  • 3/4 c. cornmeal
  • 3/4 c. Flour
  • 1/2 c. corn
  • Corn and Black Bean Salsa:
  • 1/4 c. Red Bell Pepper
  • 1/4 c. Green Bell Pepper
  • 1/4 c. Red Onion
  • 1/2 c. Black Beans cooked
  • 1/2 c. corn 2 tbsp. lemon juice
  • 1 Tbsp. Tabasco sauce
  • 1 Tbsp. cilantro salt and pepper to taste
  • Sour Cream Drizzle:
  • 1/2 c. Sour Cream
  • 1 tsp. garlic
  • 1 tsp. Cilantro

Instructions

  • Marinade: Combine Marinade ingredients and marinate swordfish.
  • Corn Cakes: Whisk eggs and half and half. Add remaining ingredients and whisk until smooth. Add flour if you prefer thicker pancakes, or half and half if you prefer thinner. Cook as you usually cook pancakes.
  • Corn and Black Bean Salsa: Combine all ingredients and chill.
  • Sour Cream Drizzle: Puree sour cream with garlic and cilantro.
  • Broil swordfish. Place corn cake on plate. Place swordfish on top of corn cake. Top with salsa and drizzle with sour cream drizzle.

Notes

Marinade: Combine Marinade ingredients and marinate swordfish. Corn Cakes: Whisk eggs and half and half. Add remaining ingredients and whisk until smooth. Add flour if you prefer thicker pancakes, or half and half if you prefer thinner. Cook as you usually cook pancakes. Corn and Black Bean Salsa: Combine all ingredients and chill. Sour Cream Drizzle: Puree sour cream with garlic and cilantro. Broil swordfish. Place corn cake on plate. Place swordfish on top of corn cake. Top with salsa and drizzle with sour cream drizzle.

Seafood and Butternut Squash Pasta Bake

Ingredients

  • 1 lb. assorted diced raw seafood (Coleson's Catch prawns, scallops, salmon, cod, halibut, mahi-mahi, etc.)
  • 4 c. pasta cooked
  • 1 c. butternut squash cooked and pureed
  • 1/2 c. onion diced and sauteed
  • 1/2 c. spinach chopped and cooked (no liquid)
  • 3 c. Half and half
  • 6 eggs
  • 1 c. breadcrumbs
  • Salt and pepper

Instructions

  • Whisk eggs with salt and pepper, add butternut squash puree and half and half and whisk. 
  • Stir in other ingredients including seafood and put in a baking dish and sprinkle with breadcrumbs.
  • Bake at 325 F. for 1 hour or until firm and no longer any liquid in the middle.

Notes

Try using pumpkin instead of squash.

Ingredients

  • 1.5 lbs. Coleson's Catch Flounder
  • 2-3 c. Marinara sauce:
  • 1-2 c. Ricotta cheese 
  • 1-2 eggs Use 1 egg for each cup of ricotta
  • 4 tsp chopped fresh basil or 1 tsp Dried
  • 2 tsp Fresh Chopped Garlic or 1/2 tsp Garlic Salt
  • 2 c. Mozzarella Cheese Grated
  • 2 Tbsp Fresh parsley Chopped

Instructions

  • Mix the ricotta, egg(s), basil and garlic.
  • In a square glass dish layer small amounts of marinara, fish, ricotta, cheese and a layer of sauce.
  • Repeat, finishing with a layer of mozzarella cheese.
  • Bake covered at 350 degrees F. for 40-50 minutes, then bake uncovered another 10 minutes.
  • Sprinkle with parsley.

Notes

If you have a favorite commercial marinara...use it. If you like to make your own - go ahead. How much sauce and ricotta you need will be determined by how wet and how ricotta-rich you like it. I'm a heavy-sauce, light-cheese gal, myself.

Cajun Cornmeal Breaded Catfish

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Catfish Fillets
  • cut into strips
  • 3/4 c cornmeal
  • 2 tsp Cajun seasoning of choice
  • 1 tsp Garlic Salt
  • 2 eggs
  • 1/3 c milk whisked with 1/3milk
  • 1/2 c Flour
  • Oil to sauté
  • Tarter sauce

Instructions

  • Mix the cornmeal, Cajun seasoning and garlic salt.
  • Bread the catfish strips: Pat dry.
  • In the order of flour, egg, and corn meal mixture, dip the strips until they are all breaded.
  • Sauté until golden brown, serve with tarter sauce and lemon.
