Tilapia and Potato Bake

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 2 c. potatoes thinly sliced
  • 1/2 Onion diced, sauteed
  • 1 Tbsp garlic chopped
  • 1/2 c. Tomatoes diced
  • 1/3 c. Parmesan cheese
  • 2 Tbsp Parsley chopped 
  • olive oil
  • Salt and Pepper

Instructions

  • Toss all ingredients except the fish and place in a baking dish.
  • Place the Tilapia on top and cover. 
  • Bake at 400 degrees for 30 minutes or until the potatoes are tender.

Tilapia Stuffed Bell Peppers

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. Celery diced
  • 2 red bell peppers
  • 1 c. cooked rice (flavored if you have it)
  • 2 Tbsp Basil chopped
  • 1 tsp. garlic chopped 
  • 2/3 c. Onion diced
  • 1 c. Marinara sauce:

Instructions

  • Halve and core the bell peppers. 
  • Dice the Tilapia and toss with remaining ingredients.
  • Fill the bell peppers with rice mixture and place in a glass dish. 
  • Cover and bake at 350 degrees F. for 1 hour.

Notes

If using leftover fish or seafood for this, proceed in the same way--except when cooking, you will only need to heat it through, not actually cook it.

Tilapia With Bok Choy And Water Chestnuts

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 2 c. Bok Choy chopped (stalks separated from leaf, using both)
  • 1 c. Onion diced
  • 2 tsp. Fresh Ginger grated
  • 1 tsp. garlic chopped
  • 1 tsp. Soy Sauce
  • 1/2 tsp. Sesame Oil
  • 1/2 tsp. Toasted sesame seeds
  • 1/4 c. Carrot grated
  • 2 Tbsp Water Chestnuts chopped
  • Plain oil

Instructions

  • In lightly oiled saute pan, cook the onion and Bok Choy until soft.
  • Add all other non-fish items and saute lightly, leaving the bok choy leaves just wilted.
  • Cook the Tilapia your favorite way and top with the cooked greens.

Notes

Suggested side dishes would be brown rice, bulgur, or quinoa.

Tilapia with Apples and Kumquats

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. Apples diced
  • 1/2 c. Carrots diced
  • 1/2 c. Celery diced
  • 3 Kumquats finely diced
  • 1/4 tsp. Thyme 1/4 tsp. Allspice
  • 1/4 c. Scallions sliced

Instructions

  • Toss the non-fish items together and place in a small glass casserole dish. 
  • Place the Tilapia on top and cover. 
  • Bake at 350 degrees for 20-30 minutes, depending on how soft you like your vegetables.
  • Suggested side dish would be a salad.

Tilapia Fillets with "Corned" Style Cabbage and Carrots

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. Chicken Broth
  • 1 Tbsp Pickling spice
  • 1/2 c. Yellow Onion diced
  • 1/4 head Cabbage quartered 
  • 6 pcs. Baby Carrots
  • 4 pcs. Red New or Yukon Potatoes

Instructions

  • Either place the pickling spice in cheesecloth and steep in the chicken broth or simmer the spice directly in the broth for 5+ minutes.  Strain. 
  • Saute the onion in any mild oil until tender. 
  • Add the broth and the potatoes, simmer until not quite tender. 
  • Add the carrots and cabbage, cook until almost tender. 
  • Submerge the fish in the picking liquid, cover and cook until done-5-7 minutes depending on thickness of the fish.
