Prawns with Blue Cheese and Apples
Servings 2 People
Ingredients
- 12 pcs Coleson's Catch Raw Black Tiger Prawns 16/20 peeled
- Salt and Pepper
- Flour for dusting
- Oil for sauteing
- 1/4 c Onions diced
- 1/4 c White Wine
- 1/4 c Chicken Broth
- 1/2 c Heavy Cream
- 1/4 c Blue Cheese crumbled
- 8-10 slices Apple peeled tart
- 1/4 c Blue Cheese crumbled
- 1/4 c pecan pieces toasted
- 2 Tbsp chopped parsley
Instructions
- Season the prawns with salt and pepper and dust with flour.
- In a sauté pan heat the oil and lightly cook the onions, add the prawns and cook for a few minutes.
- Add the wine and the stock and simmer for 1 minute.
- Add the cream, blue cheese and apples and simmer until it is the desired thickness.
Notes
Serve with lightly blanched green vegetable such as asparagus, broccoli or green beans.
Chicken, Andouille and Mussel Penne
Chicken, Andouille and Mussel Penne

Ingredients
- 32 oz pkg Coleson's Catch Pacific Delight Green Mussel on the Half Shell
- 1/2 c sliced Andouille sausage
- 1 c julienne chicken meat
- 4 c cooked penne pasta
- 2 Tbsp olive oil
- 1/2 c Red Onion diced
- 2 Tbsp chopped garlic
- 3 c Chicken Broth
- 1/2 c Kalamata Olives
- 1/4 c chopped parsley
Instructions
- Saute the onion and garlic in olive oil; add all other ingredients and bring to a boil. Serve with Parmesan cheese.
Notes
Whenever I roast a chicken and have some left over I usually use it in pasta. Cooked or raw chicken can be used.
Angel Hair with Mussels

Servings 2 People
Ingredients
- 12 oz Coleson's Catch Pacific Delight Mussels on the Half Shell
- 1/2 c dry white wine
- 1/2 c Chicken Broth
- 1 Tbsp garlic chopped
- Pinch Saffron
- 1/2 c Tomatoes diced
- Salt and Pepper
- 2 Tbsp Butter
- 3 c cooked Angel Hair Pasta
- chopped parsley for garnish
Instructions
- In a sauté pan, add wine, broth, garlic, saffron, tomatoes, salt and pepper.
- Bring to a boil.
- Place the Mussels, meat side down, in the sauté pan.
- Simmer until heated through.
- Add butter and pasta and heat through.
- Garnish with chopped parsley.
Notes
Serve with garlic bread and salad.
Salmon with Cajun Cream
Salmon with Cajun Cream
Servings 2 People
Ingredients
- 1 pkg Coleson's Catch Salmon Steaks
- 2 tsp. chopped garlic
- 1/4 c. Chicken Stock
- 1 c. Heavy Cream
- 2 Tbsp. catsup
- 1 - 2 Tbsp. Cajun seasoning* 2 is spicy!
- 1/2 c. fresh diced tomatoes
- 1 Tbsp. chopped parsley
Instructions
- Combine top ingredients and simmer until sauce is to the desired thickness.
- Pour over Salmon prepared to your liking.
- Top with tomatoes and parsley.
