Halibut with Southwest Chile Sauce

Ingredients

  • 12 oz. Halibut Steaks
  • 1/2 c. cornmeal
  • 1/2 c. Onion diced
  • 1 tsp. garlic
  • 3/4 c. Tomatoes diced
  • 2 Tbsp. Chili Powder
  • 3/4 c. Chicken stock Salt and pepper

Instructions

  • Salt and pepper the Halibut and dust with cornmeal; then sauté.
  • Simmer sauce ingredients for 15 to 20 minutes.
  • Thicken with roux or cornstarch.
  • To make sauce spicy, add crushed chili pepper.

Halibut Wrap

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Halibut meat cut into chunks
  • 1/2 tsp. Chili Powder
  • 1/4 c. Cumin
  • Salt and Pepper
  • 1/2 tsp. chopped garlic
  • Flour to dust
  • Oil for sauteing
  • 2 large flour tortillas
  • 2/3 c. Feta Cheese
  • 1/2 c. Tomatoes diced
  • 2 c Cabbage shredded
  • 1 c. Cucumber Salsa:

Instructions

  • Coat the halibut with the mixture of chili powder, cumin, garlic, salt, and pepper. 
  • Dust seasoned halibut in flour, shake off excess flour and sauté in the oil until done.
  • While halibut is sautéing, warm the tortillas over a flame, in the microwave or in a sauté pan. 
  • In a separate bowl, toss the cabbage, feta, tomatoes, salsa and halibut.
  • Arrange half of the mixture in the center of the tortilla.
  • Fold in the two sides a few inches and roll the tortilla forward to enclose mixture, secure with two toothpicks.  Cut in half.

Southwest Catfish with Corn Salsa

Ingredients

  • 1/2 c. tomato juice
  • 1 tsp. Chili Powder
  • 1 tsp. Cumin
  • 2 tsp. Oil
  • 1 tsp. Fennel Seed
  • 1 Tbsp. garlic
  • chiles if desired
  • Corn Salsa:
  • 1 Tomato diced
  • 1/2 Red Onion diced
  • 1/2 Green Bell Pepper
  • 1 tsp. garlic
  • 1/2 c. corn cooked
  • 1 tsp. Chili Powder
  • 1 Tbsp. Vinegar

Instructions

  • Mix all marinade ingredients and marinate catfish for 24 hours.
  • Mix salsa ingredients and chill for 24 hours.
  • Broil or bake the catfish and top with Corn Salsa.
