Ingredients

  • 12 oz Codfish Fillets
  • Lentils:
  • 3/4 c. dried lentils
  • 1/2 c. Onion diced
  • 2 c. Chicken Stock
  • 1/4 c. Mint chopped
  • 2 Tbsp. garlic chopped
  • 1 Tbsp. Curry Powder
  • Curried Yogurt:
  • 1 c. Plain Yogurt
  • 1 Tbsp. Curry Powder
  • 1 Tbsp. garlic chopped
  • 1 Tbsp. Mint chopped
  • 2 Tbsp. Honey

Instructions

  • Lentils: Mix all ingredients except mint.
  • Simmer until tender then add mint.
  • Add more stock during cooking, if needed.
  • Curried Yogurt: Mix all ingredients.
  • Place cooked Cod Fillets on Lentils. 
  • Top with Curried Yogurt.

Ingredients

  • 1 pkg cod fillets seasoned with salt and pepper
  • 1 small red onion sliced
  • 2 Chayote peeled, cored and thinly sliced
  • 2 Tbsp. garlic chopped
  • 6 leaves chopped fresh sage (or 1/2 tsp. dry ground sage)
  • 2/3 c. Chicken Stock

Instructions

  • Place the onion slices in a greased baking dish and layer with the chayote, garlic, sage, flounder and chicken stock.
  • Cover and bake for 20 minutes.
  • Serve with rice.

Baked Catfish with Beets

Ingredients

  • 2 lbs. catfish fillets salt and pepper
  • 4 fresh beets with greens
  • 1/2 cup Onion diced
  • 1/4 cup fresh basil chopped
  • 2 Tbsp. Oil
  • 1/4 cup balsamic vinegar
  • 1/3 cup Sugar
  • 1/2 cup Chicken Stock
  • 2 Tbsp. Cornstarch

Instructions

  • Sear the seasoned catfish in a hot pan and place in a glass baking dish.
  • Remove the beet stems from the root and boil the root in salted water until tender.
  • Cool in cold water; Remove the skins and dice.
  • Shred the beet greens and stems.
  • Sauté the onion in the oil; add the greens and basil and cook until wilted.
  • Add the vinegar, sugar and stock and bring to a boil.
  • Salt and pepper to taste.
  • Add a bit of water to the cornstarch and thicken the mixture.
  • Pour over the catfish, cover and bake for 20 minutes at 400°.
  • Serve with rice.

Coconut Catfish with Coconut-Lime Sauce

Ingredients

  • Coconut Catfish:
  • 24 oz. catfish fillets
  • 1 1/2 c. dry shredded coconut
  • 1 can Coconut Milk
  • Salt and Pepper
  • Coconut-Lime Sauce:
  • Coconut Milk
  • Juice of 3 limes
  • 1/2 c. Chicken Stock
  • 1/2 tsp. Salt
  • 2 Tbsp. Sugar
  • 2 Tbsp. Roux or cornstarch

Instructions

  • Toss the Catfish in a bowl with the salt and pepper and a couple tablespoons of coconut milk. Roll in the coconut flakes.
  • Bake for 15 minutes in a 350° oven.
  • Using the milk leftover from Coconut Catfish, combine Sauce ingredients (except roux/cornstarch) and bring to a boil.
  • Add roux or cornstarch to thicken as desired.

Ingredients

  • 1 Onion
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 2 hot peppers
  • 2 Tbsp. Thyme
  • 1 c. Chicken Stock

Instructions

  • Flour the Catfish and saute until very crispy. Set in baking dish.
  • Saute 1 thinly sliced onion, 1 red bell pepper, 1 green bell pepper and 2 hot peppers.
  • Pour over Catfish and sprinkle with 2 teaspoons thyme and 1 c. chicken stock.
  • Cover and bake for 20 minutes.
