Escovich of Catfish
Ingredients
- 1 Onion
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 2 hot peppers
- 2 Tbsp. Thyme
- 1 c. Chicken Stock
Instructions
- Flour the Catfish and saute until very crispy. Set in baking dish.
- Saute 1 thinly sliced onion, 1 red bell pepper, 1 green bell pepper and 2 hot peppers.
- Pour over Catfish and sprinkle with 2 teaspoons thyme and 1 c. chicken stock.
- Cover and bake for 20 minutes.
