Cod Fillets on a Bed of Lentils with Curried Yogurt

Ingredients
- 12 oz Codfish Fillets
- Lentils:
- 3/4 c. dried lentils
- 1/2 c. Onion diced
- 2 c. Chicken Stock
- 1/4 c. Mint chopped
- 2 Tbsp. garlic chopped
- 1 Tbsp. Curry Powder
- Curried Yogurt:
- 1 c. Plain Yogurt
- 1 Tbsp. Curry Powder
- 1 Tbsp. garlic chopped
- 1 Tbsp. Mint chopped
- 2 Tbsp. Honey
Instructions
- Lentils: Mix all ingredients except mint.
- Simmer until tender then add mint.
- Add more stock during cooking, if needed.
- Curried Yogurt: Mix all ingredients.
- Place cooked Cod Fillets on Lentils.
- Top with Curried Yogurt.
