Tilapia Fillets with "Corned" Style Cabbage and Carrots

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. Chicken Broth
  • 1 Tbsp Pickling spice
  • 1/2 c. Yellow Onion diced
  • 1/4 head Cabbage quartered 
  • 6 pcs. Baby Carrots
  • 4 pcs. Red New or Yukon Potatoes

Instructions

  • Either place the pickling spice in cheesecloth and steep in the chicken broth or simmer the spice directly in the broth for 5+ minutes.  Strain. 
  • Saute the onion in any mild oil until tender. 
  • Add the broth and the potatoes, simmer until not quite tender. 
  • Add the carrots and cabbage, cook until almost tender. 
  • Submerge the fish in the picking liquid, cover and cook until done-5-7 minutes depending on thickness of the fish.

Tilapia with Fennel and Radish

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 2 Tbsp Butter
  • 1/2 c. Red Onion diced
  • 1 c. Fennel Root sliced
  • 1/4 c. Chicken Broth
  • 1/2 c. Red Radish sliced
  • 1/2 c. Heavy Cream
  • 1/4 c Fennel Herb chopped, the dark green fronds
  • Salt and Pepper
  • Flour to dust
  • Canola oil

Instructions

  • Sauté onion in butter until soft. 
  • Add fennel root and sauté; stir until it starts to brown. 
  • Add chicken broth. 
  • Simmer until tender and add radish, fennel herb and cream; reduce until it thickens.
  • Season and dust the Tilapia with flour, then sauté (in a separate pan) until golden brown.
  • Top with the fennel mixture.
  • Serve with pasta or rice.

Red Snapper with Pears and Red Bell Peppers

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Pacific Red Snapper Fillets
  • 2 Pears firm, peeled and sliced
  • 1 Red Onion sliced
  • 1 Red Bell Pepper sliced
  • 2/3 c. Chicken Broth
  • 1/4 c. Parsley chopped

Instructions

  • Simmer the onion and red bell pepper in the chicken broth until tender. 
  • Place the snapper and the pears in a baking dish and cover with the bell pepper mixture.
  • Cover and bake for 30 minutes at 400 degrees.
  • Sprinkle with chopped parsley and serve with rice.

Orange Roughy with Short-Cut Ratatouille

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Orange Roughy
  • 2 c. Eggplant Onion, Tomatoes, Squash (yellow and green), diced
  • 1/4 c. Basil chopped
  • 2 Tbsp garlic chopped 
  • 1/2 c. Chicken Broth
  • Salt and Pepper

Instructions

  • To prepare the ratatouille, just throw ingredients in a pot and simmer until tender.
  • Dust the Roughy with flour and sauté until crispy, then top with the ratatouille mixture.

Notes

You can cook the fish with the ratatouille or cook it separately. All at once is easier and quicker. A small dice is better--it cooks faster; and if the tomatoes are finely diced, you really don't need to peel them.

  • 1 pkg Coleson’s Catch Orange Roughy
  • 1/2 c. Asparagus thinly & diagonally sliced 
  • 1/2 c. corn fresh & raw
  • 1/2 c. Tomatoes diced
  • 1/2 c. Chicken Broth
  • 2 Tbsp Parsley chopped
  • Salt and Pepper

Instructions

  • Put all ingredients in a sauce pan--fish first, the rest on top--cover and bring to a simmer, should take about 5-8 minutes. Serve.
