Flounder Fillets with Pears

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Flounder Fillets
  • flour for dusting fish
  • 2 Tbsp. Butter
  • 2 Tbsp. Shallots diced
  • 2 Tbsp. Butter
  • 2 inch small very hard, green pears (peeled and sliced 1/2thick)
  • 1/4 c. brandy pear or apple brandy if possible
  • 1 c. Heavy Cream
  • 1/4 c. yellow raisins tossed in a bit of brandy to plump
  • Salt and Pepper

Instructions

  • Salt and pepper the fish and dust with flour.
  • Sauté flounder in the butter and set aside.
  • Sauté the shallots in the butter; add the brandy and burn off the alcohol.
  • Add the cream and simmer until reduced by 1/3, add pears and raisins.
  • Continue to cook until the pears are tender and the sauce is the desired thickness.
  • Adjust seasonings.

Flounder with Radish and Turnips

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Flounder Fillets
  • 3/4 c. Radishes sliced
  • 3/4 c. turnips sliced
  • 3/4 c. shredded turnip greens (if you can get them; if not substitute another green or eliminate)
  • 3/4 c. Yellow Onion diced
  • Butter
  • 1/2 c. Chicken Broth
  • Splash of Balsamic vinegar

Instructions

  • Season the flounder and dust with flour.
  • Sauté in butter until golden and set aside.
  • Sauté the onion until tender.
  • Add the turnips and radishes and cook until tender.
  • Add the greens and broth.
  • Cover and cook just to wilt greens.
  • Hit with a splash of balsamic vinegar, adjust seasoning, and pour over fish.
  • Serve with any grain.

Ingredients

  • 12 oz pkg Coleson's Catch Cod cut in 1-inch squares 
  • 18 pcs Coleson's Catch 26/30 EZ Peel Shrimp peeled
  • 2/3 c Potato diced, sweet potato would be good
  • 1/2 c Onion diced
  • 1/2 c Celery diced
  • 1/2 c Carrot diced
  • 1/2 c Frozen Peas
  • 3 c Chicken Broth
  • 1 tube Frozen Biscuits
  • 1 Tbsp Butter

Instructions

  • In a medium-large sauce pan, melt the butter and cook the onion until translucent.
  • Add chicken broth and bring to a boil.
  • Add the vegetables and simmer until al dente.
  • Add the cod and shrimp, stir, and put in an oblong glass baking dish.
  • Top with the biscuits - I would use 8 – and bake according to biscuit instructions.

Ingredients

  • 12 oz pkg Coleson’s Catch Cod Fillets
  • 1 c. Purple Potatoes diced
  • 1/2 c. Yellow Onion diced
  • 1/3 c. Celery diced 
  • 1/2 c. Carrot diced 
  • 1/3 c. Tomatoes diced 
  • 2 Tbsp garlic chopped
  • 3 Tbsp fresh basil chopped
  • 1/4 c. White Wine
  • 1 c. Chicken Broth
  • 1 Tbsp Butter
  • Salt and Pepper

Instructions

  • Sauté onion in a large sauté pan until translucent; add white wine and chicken broth, bring to a boil.
  • Add all non-fish ingredients and simmer until al dente. 
  • Season the Cod with salt and pepper.
  • Place on top of the vegetables and cover.
  • The Cod is typically thin so it will be done quickly.
  • Serve with bread and salad.
