Slipper Lobster Tail Club Sandwich

Ingredients
- 1 pkg Coleson's Catch Slipper Lobster Tail
- 4 slices Bread of your choice toasted sourdough maybe
- Tomatoes sliced
- Lettuce of your choice
- Avocado
- 8 slices bacon cooked the way you like it
- Your choice of spread: Mayonnaise, thousand island, lemon pepper mayonnaise, cocktail sauce
Instructions
- Steam or boil the lobster in the shell 5 minutes or so. Chill the tails.
- When ready remove from shells and slice. Assemble.
- Serve with clam chowder.
Mussel Meat and Roasted Garlic Wrapped in Bacon

Mussel Meat and Roasted Garlic Wrapped in Bacon

Ingredients
- 12 oz Coleson's Catch Mussel Meat
- 24 cloves of Garlic
- 1 lb. bacon
- 24 basil leaves
- Extra Virgin Olive Oil
Instructions
- Toss the garlic with extra virgin olive oil and bake on a sheet pan until golden brown.
- (15 min. at 350) Cook the bacon until browned but not crispy.
- Place a clove of the garlic and a basil leaf on top of each mussel.
- Cut the slices of bacon in half and wrap around the mussel. Secure with a toothpick.
- Bake at 400° for approximately 10 minutes, or until the bacon is crisp and the mussel heated through.
Trout with Bacon and Mushroom Cream

Trout with Bacon and Mushroom Cream
Servings 4 People
Ingredients
- 4 portions Coleson's Catch Trout Fillets 6-8 oz. each
- bacon
- 2 tbsp Onion finely diced
- 1 tbsp Butter
- 1/2 cup Mushrooms sliced
- 1/2 cup Chicken Stock
- 1/4 tsp Black Pepper
- 1 tsp Thyme
- cornstarch or roux
Instructions
- Finely dice the bacon and saute until very crisp.
- Drain the fat and set the bacon on a paper towel.
- Saute the onion in the butter for 2 to 3 minutes.
- Add mushrooms and saute for an additional 2 to 3 minutes.
- Add chicken stock, pepper, and thyme, and bring to a boil.
- Thicken with cornstarch or roux to desired thickness.
- Add the bacon and simmer for 2 to 3 minutes.
- Sauté or boil the trout.
Notes
Top with sauce and serve with rice or potatoes. Additional Comments: * Roux is melted butter mixed with flour to make a paste.
Tilapia with Swiss Chard

Tilapia with Swiss Chard
Servings 2 People
Ingredients
- 12 oz pkg Coleson's Catch Tilapia Fillets
- 1 bunch Swiss Chard washed, dried and chopped
- 1/2 c. Onion diced
- 1/2 lb. bacon diced
- 1/2 c. Tomatoes diced
- 2 Tbsp Vinegar
- Salt and Pepper
Instructions
- Sauté the bacon until crisp; remove from the pan.
- Add the onions to the pan and sauté until tender.
- Add the Swiss Chard and sauté until tender.
- Add the tomatoes, and vinegar, bring to a boil.
- Finally, add the bacon and adjust the seasoning with salt and pepper.
Notes
For this recipe you can prepare the Tilapia two ways depending on your preference: Dust the Tilapia with flour and sauté in hot oil until very crisp and serve the chard over or on the side. Or place the Tilapia in a baking dish and pour the chard mixture over it and bake for 20 minutes.
