Halibut with Southwest Chile Sauce

Ingredients

  • 12 oz. Halibut Steaks
  • 1/2 c. cornmeal
  • 1/2 c. Onion diced
  • 1 tsp. garlic
  • 3/4 c. Tomatoes diced
  • 2 Tbsp. Chili Powder
  • 3/4 c. Chicken stock Salt and pepper

Instructions

  • Salt and pepper the Halibut and dust with cornmeal; then sauté.
  • Simmer sauce ingredients for 15 to 20 minutes.
  • Thicken with roux or cornstarch.
  • To make sauce spicy, add crushed chili pepper.

Halibut with Creamy Mushroom Herb Sauce

Ingredients

  • 1/4 c. Onion diced
  • 1/2 c. Mushrooms sliced
  • 1 Tbsp Butter
  • 1/4 c. White wine or chicken stock
  • 1/2 tsp. Tarragon
  • 1/2 tsp. Basil
  • 1/8 tsp. each salt and pepper
  • 3/4 c. Milk
  • 1 Tbsp Cornstarch

Instructions

  • Cook halibut as desired and top with Creamy Mushroom and Herb Sauce.

Notes

Sauce Preparation:
In saucepan, heat butter and saute onions and mushrooms.  Add wine or stock, tarragon, basil, salt and pepper.  Simmer for 3 minutes.  Add milk and bring to a simmer.  Combine cornstarch with cool water to make a paste.  Stir into sauce and simmer for another 3 minutes.

Cider Poached Halibut with Spiced Apples

Ingredients

  • Cider Halibut:
  • 2 lb. Halibut Fillet 
  • 1 c. apple cider
  • 1/2 tsp. Lemon Thyme -- Preferably Fresh
  • 1/4 c. Red Onion diced
  • 2 tsp. ground black pepper
  • 1/2 tsp. Salt
  • 1/4 c. cider vinegar
  • 1/2 tsp. Ground Allspice
  • Spiced Apples:
  • 2 Red Apples cut In A Julienne Skin On 
  • 1 c. apple cider
  • 1/4 c. Honey
  • 1/2 tsp. Ground Allspice
  • 1/2 tsp. ground black pepper
  • 1/2 Red Onion Halved And Sliced

Instructions

  • Cider Halibut:
  • Cut four 8 oz. portions of halibut.
  • Mix Cider Halibut ingredients and marinate for at least 3 hours.
  • Spiced Apples: 
  • Make Spiced Apples just before serving.
  • Put all ingredients except apples in a pan, bring to a boil and simmer until reduced to a syrup. 
  • Add apples, cook until al dente.
  • Remove from heat. Keep warm.

Notes

This delicious, healthy and easy to prepare recipe is also excellent for other Coleson's Catch® seafood items like Tuna, Mahi-Mahi, Chilean Sea Bass, Swordfish, Orange Roughy and Tilapia. Enjoy!

Halibut Wrap

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Halibut meat cut into chunks
  • 1/2 tsp. Chili Powder
  • 1/4 c. Cumin
  • Salt and Pepper
  • 1/2 tsp. chopped garlic
  • Flour to dust
  • Oil for sauteing
  • 2 large flour tortillas
  • 2/3 c. Feta Cheese
  • 1/2 c. Tomatoes diced
  • 2 c Cabbage shredded
  • 1 c. Cucumber Salsa:

Instructions

  • Coat the halibut with the mixture of chili powder, cumin, garlic, salt, and pepper. 
  • Dust seasoned halibut in flour, shake off excess flour and sauté in the oil until done.
  • While halibut is sautéing, warm the tortillas over a flame, in the microwave or in a sauté pan. 
  • In a separate bowl, toss the cabbage, feta, tomatoes, salsa and halibut.
  • Arrange half of the mixture in the center of the tortilla.
  • Fold in the two sides a few inches and roll the tortilla forward to enclose mixture, secure with two toothpicks.  Cut in half.

Poached Halibut with Leeks

Ingredients

  • 12 oz. pkg Coleson's Catch Halibut
  • 1/2 c. dry white wine
  • 1/4 c. water
  • 1 c. Leeks thinly sliced
  • 2/3 c. Frozen Peas thawed Salt and pepper

Instructions

  • In a sauté pan, simmer the leeks in wine, water, salt and pepper until tender.
  • Add the halibut; cover and continue to simmer for 5-7 minutes, depending on the thickness of the fish.
  • Add the peas and warm through.
  • Serve with a side salad or with mashed potatoes or rice.
