Cider Poached Halibut with Spiced Apples
Servings 4 People
Ingredients
- Cider Halibut:
- 2 lb. Halibut Fillet
- 1 c. apple cider
- 1/2 tsp. Lemon Thyme -- Preferably Fresh
- 1/4 c. Red Onion diced
- 2 tsp. ground black pepper
- 1/2 tsp. Salt
- 1/4 c. cider vinegar
- 1/2 tsp. Ground Allspice
- Spiced Apples:
- 2 Red Apples cut In A Julienne Skin On
- 1 c. apple cider
- 1/4 c. Honey
- 1/2 tsp. Ground Allspice
- 1/2 tsp. ground black pepper
- 1/2 Red Onion Halved And Sliced
Instructions
- Cider Halibut:
- Cut four 8 oz. portions of halibut.
- Mix Cider Halibut ingredients and marinate for at least 3 hours.
- Spiced Apples:
- Make Spiced Apples just before serving.
- Put all ingredients except apples in a pan, bring to a boil and simmer until reduced to a syrup.
- Add apples, cook until al dente.
- Remove from heat. Keep warm.
