Breakfast Polenta–Creamy

Breakfast Polenta--Creamy

Course Dessert
Servings 2 People

Ingredients

  • 2 c Milk
  • 1/2 c Sugar
  • 1/2 tsp Cinnamon
  • Pinch of salt
  • 1 c corn meal

Instructions

  • Simmer all ingredients until smooth and not gritty, stirring constantly.
  • If you like it thinner, add more milk.
  • Top with any combination of maple syrup, heavy cream, brown sugar, raisins, etc.

Notes

Sautéed: Same as above except pour into a greased sheet pan or bread pan and cool. If you use a bread pan, once cool, remove it and slice into slices to saute in butter. These are great with maple syrup and sausage. If you used a sheet pan, cut into shapes to sauté.

Basic Savory Polenta–Creamy, Sautéed and Deluxe

Basic Savory Polenta--Creamy, Sautéed and Deluxe

Course Side Dish
Cook Time 10 minutes
Total Time 10 minutes
Servings 2 People

Ingredients

  • 2 c. Chicken Broth
  • 1 Tbsp garlic chopped
  • 1 tsp Italian seasoning
  • 2 Tbsp fresh basil chopped
  • Salt and Pepper
  • 1 c cornmeal
  • Half and half

Instructions

  • In a heavy saucepan bring all the ingredients except half and half to a boil.
  • Simmer for approximately 10 minutes or until the cornmeal is smooth and not gritty. Stir frequently.
  • Add half and half to achieve the desired creaminess.
  • It will get thicker as it cools so I make mine a little thinner so it doesn't get gummy half way through eating.

Notes

Sauteed: Use the same process as above but don't thin it as much and spread in an oiled sheet pan to cool. Spread with oil on top as well to prevent cracking. Once cool, cut into desired shapes and saute in hot oil until brown and crispy.
Deluxe: Same process as above, with the addition of 1 c. finely diced sautéed vegetables such as onions, celery, carrots, cabbage, etc.

Course Salad

Ingredients

  • 4 c Lettuce shredded
  • 1 c Jicama diced 
  • 1 c Cherry Tomatoes halved 
  • 2/3 c Pepper Jack Cheese grated 
  • 1/3 c Lime Juice
  • 1/2 c Vegetable oil
  • 1/2 c Scallion sliced 
  • 1 tsp Chili Powder
  • Salt and Pepper

Instructions

  • Mix the lime juice, vegetable oil, scallion, salt and pepper.
  • In the serving bowl, mix the vegetables and cheese.
  • Add the dressing & toss together.

Course Salad

Ingredients

  • 1 c Cherry Tomatoes halved 
  • 1/2 Red Onion thinly sliced
  • 1 English Cucumber peeled, seeded and sliced 
  • 1/2 c Kalamata Olives sliced
  • 2/3 c Feta Cheese crumbled 
  • 1/4 c balsamic vinegar
  • 1/3 c olive oil
  • Salt and Pepper
  • 4 c Lettuce of your choice shredded 

Instructions

  • Mix all ingredients except lettuce. Pour the mixture over the shredded lettuce. Serve.

Audrey's Winter Dream Salad I

Course Salad

Ingredients

  • 4 cups Iceberg Lettuce chopped 
  • 1 c Cherry Tomatoes halved 
  • 1 c Blue Cheese crumbled 
  • 1 c Bay Shrimp cooked & chilled 
  • 1/3 c balsamic vinegar
  • 1/2 c olive oil

Instructions

  • In individual bowls, divide in this order: the lettuce, tomatoes, blue cheese, bay shrimp, vinegar and oil. Serve.

Notes

Winter for some reason makes me want a crunchy salad. There are a lot of lettuce snobs out there, but not me; I want iceberg lettuce. If you can't make yourself use the lowly iceberg lettuce, use romaine as it is crunchy, too.
