Coho Salmon Fillet with Asparagus

Ingredients

  • 1 pkg Coleson's Catch Coho Salmon
  • 1 handful Asparagus
  • 2/3 c Tomato diced
  • 1/2 c Onion diced
  • 1/2 lemon
  • 1/4 cup White Wine
  • 1/4 cup Chicken Broth
  • Salt and Pepper

Instructions

  • Put the broth and wine in a sauté pan.
  • Squeeze lemon into it and drop the rind into the liquid. Season with salt and pepper.
  • Add onion and bring to a boil.
  • Add salmon, asparagus and tomato and simmer covered for 4-5 minutes depending on how thick the salmon is.
  • Serve with a grain.

Chilled, Poached Mahi-Mahi with Wasabi Vinaigrette and Cucumber Salsa

Servings 2 People

Ingredients

  • 12 oz MColeson's Catch Mahi-Mahi Fillets
  • Cucumber Salsa:
  • 1 English Cucumber seeded and finely diced
  • 1 small red pepper finely diced
  • 1 small red onion finely diced
  • 1 tsp. crushed red pepper
  • 3 Tbsp. Rice Wine Vinegar
  • 1 tsp. Lemon Juice
  • 1/4 c. olive oil
  • Salt and Pepper to taste
  • a dash of dill
  • Wasabi Vinaigrette:
  • 2 c. olive oil
  • 1 c. Rice Wine Vinegar
  • 1 Egg
  • 3/4 c. prepared Wasabi
  • 1 1/2 tsp. Sugar
  • 1 tsp. horseradish
  • 1 tsp. Lemon Juice

Instructions

  • Wasabi Vinaigrette: Place all ingredients except olive oil in blender. Process on low. Slowly add olive oil until it becomes emulsified (a mayonnaise-like consistency).
  • Cucumber Salsa: Mix all ingredients.
  • Place the cooked fish (cooked as desired: baked, broiled, etc..) in a serving platter.
  • Top with the Cucumber Salsa.
  • Then, either drizzle the Wasabi vinaigrette over the fish or place the vinaigrette around the edges of the fish.

Mahi-Mahi Sandwich with Yogurt and Dill Splash

Ingredients

  • 12 oz package Coleson's Catch Mahi-Mahi Fillets skin removed
  • 3/4 c Plain Yogurt
  • 1/2 c grated peeled, seeded cucumber
  • 1 Tbsp chopped dill
  • 1 Tbsp diced red onion
  • 1 Tsp chopped garlic
  • Salt and Pepper
  • Focaccia bread
  • Tomato slices

Instructions

  • Mix the ingredients for the splash the day before using and chill overnight.
  • Broil the Mahi-Mahi and top with the splash and assemble with sliced tomatoes on Focaccia bread.

Mahi-Mahi and Mango Wrap

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Mahi-Mahi cut into chunks
  • 3 c shredded iceberg lettuce
  • 1 c Mango Salsa
  • 2 tortillas

Instructions

  • Season Mahi-Mahi and cook in your preferred style (saute, grilled, pan-fried).
  • When cooked, dice and mix with the other ingredients.
  • Warm tortillas over a flame, in the microwave or in a saute pan. 
  • Arrange half of the mixture in the center of the tortilla.
  • Fold in the 2 sides a few inches and roll the tortilla forward to enclose mixture, secure with two toothpicks. Cut in half.

Mahi-Mahi with Zucchini and Carrot "Spaghetti"

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 2 c Yellow or Green Squash and Carrots any combination and cut in long thin strips "spaghetti" style
  • 1/2 c Onion diced 
  • 2 Tbsp garlic chopped 
  • 1/2 c Tomatoes diced
  • 2 Tbsp Parsley chopped 
  • 1/2 c Chicken Broth

Instructions

  • Saute the onion and garlic.
  • Add the other ingredients, cover and simmer. Serve.

Notes

You need a mandoline or some such cutter for this.
