Mahi-Mahi with Zucchini and Carrot "Spaghetti"
Servings 2 People
- 1 pkg Coleson's Catch Mahi-Mahi
- 2 c Yellow or Green Squash and Carrots any combination and cut in long thin strips "spaghetti" style
- 1/2 c Onion diced
- 2 Tbsp garlic chopped
- 1/2 c Tomatoes diced
- 2 Tbsp Parsley chopped
- 1/2 c Chicken Broth
- Saute the onion and garlic.
- Add the other ingredients, cover and simmer. Serve.
You need a mandoline or some such cutter for this.
