Orange Roughy with Beets

Orange Roughy with Beets

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Orange Roughy
  • Salt and Pepper
  • Flour for dusting
  • 2 c. diced beets cooked (Can use canned—but NOT pickled)
  • 1/2 c. diced onion
  • Butter
  • Oil

Instructions

  • Sauté onions in butter until translucent.  Add the beets, salt, and pepper. 
  • Continue to cook until the beets are warmed through.  There should be enough butter so it is a little saucy.  If it starts to look oily add a little water. 
  • Season and dust the Orange Roughy Fillet in flour and sauté in hot oil for a couple of minutes on each side, until golden brown.
  • Top with beets.

Notes

Serve with a salad. Additional Comments: In my circle, beets are making a comeback. Why not?

Baked Teriyaki Orange Roughy

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Orange Roughy
  • Your favorite Teriyaki marinade homemade or store-bought

Instructions

  • Marinate the Orange Roughy overnight.
  • Place fish in a baking dish and cook at 400° for 12-15 minutes.
  • Serve with steamed rice and broccoli or a salad.

Poached Cider Halibut

Servings 4 People

Ingredients

  • Cider Halibut:
  • 2 lb. Coleson's Catch Halibut Fillets
  • 1 c. apple cider
  • 1/2 tsp. lemon thyme preferably fresh
  • 1/4 c. Red Onion diced
  • 2 tsp. ground black pepper
  • 1/2 tsp. Salt
  • 1/4 c. cider vinegar
  • 1/2 tsp. Ground Allspice
  • Spiced Apples:
  • 2 in red apples cut julienne skin on
  • 1 c. apple cider
  • 1/4 c. Honey
  • 1/2 tsp. Ground Allspice
  • 1/2 tsp. ground black pepper
  • 1/2 Red Onion halved and sliced

Instructions

  • Cider Halibut:  Cut four 8 oz. portions of halibut.
  • Mix Cider Halibut ingredients and marinate for at least 3 hours.
  • Make Spiced Apples just before serving:
  • Put all ingredients except apples in a pan. 
  • Bring to a boil and simmer until reduced to a syrup.
  • Add apples, cook until al dente.
  • Remove from heat. Keep warm. 
  • Suggested Wine: Pinot Noir.

Halibut Steaks with Peanut Sauce

Ingredients

  • 12 oz pkg Coleson's Catch Halibut Steaks
  • For Marinade
  • 1 tsp. garlic chopped 
  • 1 tsp. Ginger grated
  • 1 tsp. Soy Sauce
  • For Sauce:
  • 1 Tbsp Oil
  • 1/2 c. Onion diced
  • 1 tsp. garlic chopped
  • 1 tsp. Ginger grated
  • 1/2 tsp. Curry
  • 1/2 c. Chicken Broth
  • 2 Tbsp Soy Sauce
  • 1/4 c. Coconut Milk
  • 1/4 c. Peanut Butter
  • 1 Tbsp Peanuts chopped
  • 1 Tbsp Parsley chopped

Instructions

  • Marinate halibut for 1 hour.
  • Sauté onion until translucent.
  • Add ginger and garlic. Then curry, broth, soy sauce, and coconut milk. Bring to a boil.
  • Add peanut butter and blend in.
  • Place halibut steaks in sauce, simmer until done--about 5-7 minutes.
  • Sprinkle with peanuts and parsley.
  • Serve with rice or Asian noodles.

Halibut Steaks with Cardamom and Carrot Sauce

Servings 2 People

Ingredients

  • 12 oz pkg. Coleson's Catch Halibut Steaks
  • 2/3 c. Baby Carrots
  • 1/2 c. Chicken Broth plus additional for thinning
  • 4 Tbsp Heavy Cream
  • 2 Tbsp Sweet Butter
  • cardamom
  • Salt and Pepper

Instructions

  • Cook the carrots in the broth until tender and puree. 
  • Add butter and heavy cream.
  • Heat and adjust thickness with broth or cream--it should be saucy not like a puree.
  • Dust the halibut with cardamom, salt and pepper.
  • Poach in the chicken broth.
