Poached Cider Halibut

Ingredients
- Cider Halibut:
- 2 lb. Coleson's Catch Halibut Fillets
- 1 c. apple cider
- 1/2 tsp. lemon thyme preferably fresh
- 1/4 c. Red Onion diced
- 2 tsp. ground black pepper
- 1/2 tsp. Salt
- 1/4 c. cider vinegar
- 1/2 tsp. Ground Allspice
- Spiced Apples:
- 2 in red apples cuta julienne skin on
- 1 c. apple cider
- 1/4 c. Honey
- 1/2 tsp. Ground Allspice
- 1/2 tsp. ground black pepper
- 1/2 Red Onion halved and sliced
Instructions
- Cider Halibut: Cut four 8 oz. portions of halibut.
- Mix Cider Halibut ingredients and marinate for at least 3 hours.
- Make Spiced Apples just before serving:
- Put all ingredients except apples in a pan.
- Bring to a boil and simmer until reduced to a syrup.
- Add apples, cook until al dente.
- Remove from heat. Keep warm.
- Suggested Wine: Pinot Noir.
