African-Marinated Mahi-Mahi With Sadza

Ingredients

  • Marinade:
  • 1 Tbsp. lemon
  • 1 tsp. Ginger
  • 2 Tbsp. Peanut Butter
  • 1/4 c. tomato juice
  • 1 Tbsp. garlic chopped
  • 1 tsp. Curry Powder
  • hot chili peppers to taste
  • Sadza:
  • 1 c. cornmeal finely ground
  • 4 c. cold water or chicken stock
  • 1 tsp. garlic
  • 1 tsp. Cumin

Instructions

  • Blend marinade ingredients and marinate the Mahi-Mahi for 24 hours. Broil.
  • For Sadza: Mix the cornmeal with the remaining ingredients in a sauce pan. Heat the mixture while whisking continuously.
  • Cook until cornmeal is soft and mixture is thick--approximately 10-20 minutes.

Notes

If using unsalted peanut butter, add 1/4 tsp. salt.

Oven Roasted Root Vegetable Bake

Ingredients

  • 3 cups of peeled diced root vegetables (parsnip, celery root, turnip, carrot)
  • 2/3 cup diced onion (yellow white or red)
  • 1 tsp. Thyme
  • 3 Tbsp. olive oil

Instructions

  • Toss all ingredients (except the fish) together and add salt and pepper to taste.
  • Bake on a sheet pan at 400° for 15 minutes, stirring every 5 minutes.
  • Pour the browned vegetables over the seared fish and cover with foil or a lid.
  • Bake for 20 minutes or until the fish is cooked.
  • This dish may be made ahead up to the point of the final baking and then refrigerated.
  • Increase the final cooking time to 40 minutes.

Notes

Serving Suggestions:
Side dishes that go well are steamed broccoli and a salad.
Additional Comments:
This preparation is most appropriate for Mahi-Mahi, oyster meat and Tilapia. A combination of one or more of these types of fish is excellent. Season fish with salt and pepper, then sear whole or cubed in a hot pan; the cubed method is easier to serve. Place fish in a glass baking dish.

Baked Walnut Mahi-Mahi

Servings 4 People

Ingredients

  • 2 lb. Coleson's Catch Mahi-Mahi
  • 1/2 cup graham crackers
  • 1/2 cup toasted walnuts
  • 1/2 tsp. Allspice
  • 1/2 tsp. Black Pepper
  • 1 Tbsp. walnut oil or butter

Instructions

  • Chop crackers and walnuts in the Cuisinart until fine, and add allspice, pepper and oil or butter.
  • Sprinkle the Mahi-Mahi with salt and spread the top with a generous coating of the mixture; Bake at 400F for 7-10 minutes.

Notes

Serve with Autumn Israeli Cous Cous and Cranberry Chutney.

Tomato Basil Mahi-Mahi

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets skin removed
  • 2 Tomatoes diced
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp fresh basil chopped
  • 1 Tbsp garlic chopped
  • Salt and Pepper

Instructions

  • Mix the ingredients, except Mahi-Mahi, in a saucepan and bring to a boil.
  • Broil Mahi-Mahi and top with the sauce.

Mahi-Mahi with Toasted Pecan Cream

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi Portions
  • 1/4 c Sherry
  • 2 Tbsp Shallots chopped
  • 3/4 c Heavy Cream
  • 1/4 tsp Allspice
  • 1/2 c Toasted Pecans chopped

Instructions

  • In a saucepan, simmer the sherry and shallots until the sherry is almost gone.
  • Add the heavy cream and the allspice and simmer until the cream thickens slightly.
  • Add the pecans and bring to a boil.

Notes

Serve with Mahi-Mahi cooked any style (refer to package instructions).
