Tuna Steaks with Pineapple and Apricots

Tuna Steaks with Pineapple and Apricots

Ingredients
  • 1 pkg Coleson’s Catch Tuna Steaks thawed
  • ½ c Pineapple Juice
  • 2 tbsp Shallots minced
  • 1 tbsp Ginger grated
  • 2 tbsp Lime Juice
  • ½ c Pineapple diced
  • ½ c Apricot diced
  • 1 tbsp Mint chopped
  • 2 c Fancy Greens or Spinach
  • Salt and Pepper

  • 1 pkg Coleson’s Catch Tuna Steaks thawed
  • ½ c Pineapple Juice
  • 2 tbsp Shallots minced
  • 1 tbsp Ginger grated
  • 2 tbsp Lime Juice
  • ½ c Pineapple diced
  • ½ c Apricot diced
  • 1 tbsp Mint chopped
  • 2 c Fancy Greens or Spinach
  • Salt and Pepper
Instructions
  1. Simmer the shallots and ginger in pineapple juice until tender. 
  2. Add lime juice, diced pineapple and mint; simmer until heated through. 
  3. Add the apricot, stir, cover and turn off heat. 
  4. Cook the seasoned tuna over an open flame or sear in a hot pan to get a nice crust. 
  5. Place the tuna on a bed of greens and top with the hot fruit mixture.

  • 1 pkg Coleson’s Catch Tuna Steaks thawed
  • 2 tsp Canola oil
  • 1 tsp garlic chopped
  • 1 tsp Ginger grated
  • ½ c Chicken Broth
  • ½ c Carrots cut into matchstick size strips
  • ½ c Green Onion sliced
  • 20 Snow Peas trimmed
  • ¼ c Water Chestnuts sliced
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • Salt & Pepper

  • 1 pkg Coleson’s Catch Tuna Steaks thawed
  • 2 tsp Canola oil
  • 1 tsp garlic chopped
  • 1 tsp Ginger grated
  • ½ c Chicken Broth
  • ½ c Carrots cut into matchstick size strips
  • ½ c Green Onion sliced
  • 20 Snow Peas trimmed
  • ¼ c Water Chestnuts sliced
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • Salt & Pepper
Instructions
  1. Season the tuna with salt and pepper. Sear in the canola oil for 1 minute on each side and set aside. 
  2. Sauté the garlic and ginger for 1 minute then add all the other ingredients. Simmer until the carrots are tender.
  3. Top the tuna with the vegetables.

Ahi Tuna Steaks with Green Tomato Chutney

  • 12 oz pkg Ahi Tuna thawed
  • ½ c Red Onion diced
  • 2 c green tomato diced
  • ¼ c cider vinegar
  • ½ c Sugar
  • 2 Tbsp Ginger grated
  • 1/4 c cranberry dried
  • fresh spinach

  • 12 oz pkg Ahi Tuna thawed
  • ½ c Red Onion diced
  • 2 c green tomato diced
  • ¼ c cider vinegar
  • ½ c Sugar
  • 2 Tbsp Ginger grated
  • 1/4 c cranberry dried
  • fresh spinach
Instructions
  1. In a saucepan, melt the sugar & cider, vinegar.
  2. Add the onion and ginger and simmer until the sugar thickens.
  3. Add the green tomato and cook until the tomatoes are soft and it is not watery; it will depend on how green the tomatoes are. If they are half ripe they will have more water in them.
  4. Add the cranberries and chill.
  5. If you like a spicy chutney, add some crushed chilies when you add the tomatoes.
  6. Salt and pepper the Ahi tuna and sear in hot oil for 1 minute on each side.
  7. Slice it thinly.
  8. Fan out the tuna on a bed of spinach and top with chutney.

  • 1/4 c Lemon Juice
  • 1/4 c pomegranate juice
  • 1/4 tsp Salt and Pepper
  • 1/2 c Red Onion diced
  • 1/4 c water
  • 1/4 c Basil chopped

Passive Time 24 hour

  • 12 oz Coleson’s Catch Tuna Steaks
  • Marinade:
  • 1/4 c Lemon Juice
  • 1/4 c pomegranate juice
  • 1/4 tsp Salt and Pepper
  • 1/2 c Red Onion diced
  • 1/4 c water
  • 1/4 c Basil chopped
Instructions
  1. Thinly slice the tuna and marinate for 24 hours.
  2. Garnish with pomegranate kernels when in season.
  3. Chopped apple and or oranges would be good additional ingredients.
Recipe Notes

I like it with crumbled blue cheese and sweet baguette.

  • 1 tsp crushed chili flakes
  • 1/4 c Lime Juice
  • 1/4 c Cilantro chopped
  • 1/4 tsp Salt and Pepper
  • 1/2 tsp Lime Zest grated
  • 1/2 tsp Cumin
  • 2 Tbsp white wine vinegar
  • 1 Tbsp garlic chopped
  • 1 tsp Chili Powder
  • 1/2 c Red Onion diced
  • 1/4 c water
