Tequila-Lime Halibut

  • 4 Coleson's Catch Halibut Fillets 6-8 oz. Each
  • 1/4 c. tequila
  • 2 Tbsp Cilantro chopped
  • 2 Tbsp garlic chopped
  • Salt and Pepper
  • Sauce:
  • 1/2 c. Sour Cream
  • 1 Tbsp garlic chopped
  • 1 Tbsp Cilantro chopped
  • 1/2 tsp. Black Pepper
  • 1 dash Tequila

  • 4 Coleson's Catch Halibut Fillets 6-8 oz. Each
  • 1/4 c. tequila
  • 2 Tbsp Cilantro chopped
  • 2 Tbsp garlic chopped
  • Salt and Pepper
  • Sauce:
  • 1/2 c. Sour Cream
  • 1 Tbsp garlic chopped
  • 1 Tbsp Cilantro chopped
  • 1/2 tsp. Black Pepper
  • 1 dash Tequila
Instructions
  1. Sauce preparation: Blend sauce ingredients in blender or food processor.
  2. Marinate the Halibut in tequila, 2 Tbsp cilantro, and 2 Tbsp garlic. Broil the fish and drizzle with sauce. 
  3. Serve with rice and seasonal vegetable.

  • Cider Halibut:
  • 2 lb. Coleson's Catch Halibut Fillets
  • 1 c. apple cider
  • 1/2 tsp. lemon thyme preferably fresh
  • 1/4 c. Red Onion diced
  • 2 tsp. ground black pepper
  • 1/2 tsp. Salt
  • 1/4 c. cider vinegar
  • 1/2 tsp. Ground Allspice
  • Spiced Apples:
  • 2 in red apples cuta julienne skin on
  • 1 c. apple cider
  • 1/4 c. Honey
  • 1/2 tsp. Ground Allspice
  • 1/2 tsp. ground black pepper
  • 1/2 Red Onion halved and sliced

  • 2 lb. Coleson's Catch Halibut Fillets
  • 1 c. apple cider
  • 1/2 tsp. lemon thyme preferably fresh
  • 1/4 c. Red Onion diced
  • 2 tsp. ground black pepper
  • 1/2 tsp. Salt
  • 1/4 c. cider vinegar
  • 1/2 tsp. Ground Allspice
  • Spiced Apples:

  • 1 c. apple cider

Instructions
  1. Cider Halibut:  Cut four 8 oz. portions of halibut.
  2. Mix Cider Halibut ingredients and marinate for at least 3 hours.
  3. Make Spiced Apples just before serving:
  4. Put all ingredients except apples in a pan. 
  5. Bring to a boil and simmer until reduced to a syrup.
  6. Add apples, cook until al dente.
  7. Remove from heat. Keep warm. 
  8. Suggested Wine: Pinot Noir.

  • 12 oz Halibut Steaks
  • 1 1/2 c. Tomatoes diced
  • 1 Tbsp garlic
  • 2 Tbsp olive oil
  • 1/2 c. Onion diced
  • 1 tsp. crushed chilies or 1 jalapeno diced

  • 1 1/2 c. Tomatoes diced
  • 1 Tbsp garlic
  • 2 Tbsp olive oil
  • 1/2 c. Onion diced
  • 1 tsp. crushed chilies or 1 jalapeno diced
Instructions
  1. Sauté onion in olive oil. 
  2. Add tomato, garlic, and chilies.
  3. Simmer for a couple minutes. 
  4. Adjust seasoning.

  • 12 oz. Halibut Steaks
  • 1/2 c. cornmeal
  • 1/2 c. Onion diced
  • 1 tsp. garlic
  • 3/4 c. Tomatoes diced
  • 2 Tbsp. Chili Powder
  • 3/4 c. Chicken stock Salt and pepper
Cook Time 15-20 minutes

  • 12 oz. Halibut Steaks
  • 1/2 c. cornmeal
  • 1/2 c. Onion diced
  • 1 tsp. garlic
  • 3/4 c. Tomatoes diced
  • 2 Tbsp. Chili Powder
  • 3/4 c. Chicken stock Salt and pepper
Instructions
  1. Salt and pepper the Halibut and dust with cornmeal; then sauté.
  2. Simmer sauce ingredients for 15 to 20 minutes.
  3. Thicken with roux or cornstarch.
  4. To make sauce spicy, add crushed chili pepper.

  • 1/4 c. Onion diced
  • 1/2 c. Mushrooms sliced
  • 1 Tbsp Butter
  • 1/4 c. White wine or chicken stock
  • 1/2 tsp. Tarragon
  • 1/2 tsp. Basil
  • 1/8 tsp. each salt and pepper
  • 3/4 c. Milk
  • 1 Tbsp Cornstarch

  • 1/4 c. Onion diced
  • 1/2 c. Mushrooms sliced
  • 1 Tbsp Butter
  • 1/4 c. White wine or chicken stock
  • 1/2 tsp. Tarragon
  • 1/2 tsp. Basil
  • 1/8 tsp. each salt and pepper
  • 3/4 c. Milk
  • 1 Tbsp Cornstarch
Instructions
  1. Cook halibut as desired and top with Creamy Mushroom and Herb Sauce.
Recipe Notes

Sauce Preparation:

In saucepan, heat butter and saute onions and mushrooms.  Add wine or stock, tarragon, basil, salt and pepper.  Simmer for 3 minutes.  Add milk and bring to a simmer.  Combine cornstarch with cool water to make a paste.  Stir into sauce and simmer for another 3 minutes.
