African-Marinated Mahi-Mahi With Sadza

Ingredients

  • Marinade:
  • 1 Tbsp. lemon
  • 1 tsp. Ginger
  • 2 Tbsp. Peanut Butter
  • 1/4 c. tomato juice
  • 1 Tbsp. garlic chopped
  • 1 tsp. Curry Powder
  • hot chili peppers to taste
  • Sadza:
  • 1 c. cornmeal finely ground
  • 4 c. cold water or chicken stock
  • 1 tsp. garlic
  • 1 tsp. Cumin

Instructions

  • Blend marinade ingredients and marinate the Mahi-Mahi for 24 hours. Broil.
  • For Sadza: Mix the cornmeal with the remaining ingredients in a sauce pan. Heat the mixture while whisking continuously.
  • Cook until cornmeal is soft and mixture is thick--approximately 10-20 minutes.

Notes

If using unsalted peanut butter, add 1/4 tsp. salt.

Tomato Basil Mahi-Mahi

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets skin removed
  • 2 Tomatoes diced
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp fresh basil chopped
  • 1 Tbsp garlic chopped
  • Salt and Pepper

Instructions

  • Mix the ingredients, except Mahi-Mahi, in a saucepan and bring to a boil.
  • Broil Mahi-Mahi and top with the sauce.

Mahi-Mahi Wrapped in Filo

Ingredients

  • 1 pkg Coleson’s Catch Mahi-Mahi Fillets thawed
  • 2-3 c fresh spinach
  • olive oil
  • 3 clove garlic chopped
  • 1/2 c Roasted Tomatoes diced
  • 1/4 c Kalamata Olive sliced
  • 1/2 c Feta Cheese crumbled
  • Salt & Pepper

Instructions

  • Sauté the spinach in olive oil and set aside to cool.
  • Lightly sauté the garlic and set aside.
  • Combine the tomatoes, olives, cheese and garlic.
  • Chop the cooled spinach and add to the cheese mixture.
  • Season the Mahi-Mahi with salt and pepper.
  • Take a sheet of the filo and brush it with melted butter; place another sheet over it and brush with butter.
  • Place half of the spinach mixture in the center of the filo and place the mahi-mahi on top of it.
  • Wrap the ends of the filo dough around the fish and turn over so the top is the smooth part, tucking the ends underneath.
  • Brush with melted butter. Repeat. Bake at 400 degrees for 15-20 minutes or until golden brown.
  • Serve with garlic bread and a salad.

Notes

If you bought some fresh spinach to make a salad and didn't use it all, or didn't use it at all, you need to use it up before it gets slimy. This recipe is one way.

Mahi-Mahi with Lemon and Cucumber

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi thawed, skinned
  • 1 c Cucumber peeled, seeded, diced 
  • 1 lemon zest and juice 
  • 1/2 c Red Onion diced 
  • 2 Tbsp Basil chopped 
  • 1 Tbsp garlic chopped 
  • 1/4 c Red Bell Pepper diced 
  • Salt and Pepper
  • 3 c Lettuce mixed variety

Instructions

  • Either poach or grill the Mahi-Mahi.
  • Mix the rest of the ingredients except the lettuce and marinate a bit.
  • Toss half of the cucumber mixture with the lettuce and put on the plate; place Mahi-Mahi on top and then top with the rest of the mixture.

Notes

If you want to splurge fat-wise, feta cheese and kalamata olives are great.

Curried Mahi-Mahi with Tomatoes and Garlic

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi thawed, skinned, seasoned with salt and pepper
  • 1 Tbsp Curry Powder
  • 1 Tbsp garlic chopped 
  • 1/2 c Chicken Broth
  • 1/2 c Tomatoes diced
  • Salt and Pepper
  • Parsley chopped

Instructions

  • Dredge the Mahi-Mahi in curry powder.
  • In a saute pan, bring the chicken broth and garlic to a boil.
  • Add the Mahi-Mahi and the tomatoes, simmer for 5 minutes.

Notes

Traditionally served with rice but if you want to forego the starch, use shredded iceberg lettuce instead. It has a great crunch that holds up when hot. Don't forget the chutney!
