Mahi-Mahi with Lemon Cucumber Cream

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets skin removed
  • 1 c Flour
  • 1/2 c Onion
  • 1 Tbsp Butter
  • 3/4 c Half and half
  • 1 tsp concentrated chicken stock available at the store in a bottle or you can make by using bouillon cubes and very little water
  • 1 Tbsp raw roux clarified butter mixed with flour
  • 1/2 c diced peeled and seeded cucumber
  • 1 tsp Lemon Zest
  • 1 Tbsp chopped parsley

Instructions

  • Sauté the onion in the oil.
  • Add the half and half and chicken stock.
  • Bring to a boil and add roux.
  • Whisk over medium heat until thickened and smooth.
  • Add the cucumber, lemon and parsley and return to a boil.
  • Sprinkle both sides of the Mahi-Mahi and dust with flour.
  • Sauté in butter to a golden brown and top with sauce.

Mahi-Mahi with Mustard Greens

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets
  • 4 strips Bacon
  • 2 c Mustard Greens
  • 1/2 c Yellow Onion diced
  • 1 tsp garlic chopped
  • 1/2 c Chicken Broth
  • 1 Tbsp cider vinegar or white wine
  • Salt and Pepper
  • Flour
  • Canola oil

Instructions

  • Cut the bacon into small pieces and sauté until crisp, drain and keep fat.
  • Sauté the onion in the bacon grease until clear.
  • Add garlic, stir a bit but do not brown. Add the greens and chicken broth.
  • Cover and simmer until tender-say, 5 minutes.
  • Add the vinegar and bacon, heat through.
  • Season and flour the Mahi-Mahi fillets.
  • Sauté in canola oil until golden.
  • I would serve with dirty rice.

Notes

There are many ways to prepare the greens -- some people don't use the stems but I don't get that. I cut them into thin strips.

Mahi-Mahi with Roasted Pumpkin and Brown Butter

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets
  • 1 1/2 c Pumpkin seeded, cut into squares
  • in water about 1/2tray
  • 1/2 c salted butter
  • 1/4 c Pumpkin seeds toasted
  • Flour
  • Salt and Pepper
  • 1 Tbsp Butter
  • Splash of Oil
  • Parsley chopped

Instructions

  • Roast the fresh pumpkin on a sheet pan flesh side down.
  • Put water on the sheet pan and bake at 350°F until tender.
  • Time varies by size of pumpkin. At least 40 minutes--it is good if it browns a bit.
  • Remove the flesh from skin with a spoon, discard peel.
  • Add salt and pepper and set aside.

Cornmeal Crusted Trout

Servings 4 People

Ingredients

  • 4 Trout dressed
  • Flour
  • 1 egg whisked with a splash of milk
  • 2/3 cup cornmeal
  • seasoning salt
  • Garlic Salt
  • Black Pepper
  • Canola oil or vegetable oil

Instructions

  • Generously season the damp trout with the seasoning salt, garlic salt and pepper. 
  • Roll the trout in flour, dip it in the egg mixture and roll in the cornmeal getting as much as possible to stick. 
  • Sauté in hot oil until golden brown and cooked (approximately 3 minutes per side).
  • Great with tartar sauce.

Baked Tilapia Fillets with Grated Sweet Potato

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 Sweet Potato peeled and grated
  • 2 Tbsp Fresh Ginger grated
  • 1/4 c. Green Onion chopped
  • 1/2 c. Flour
  • Salt and Pepper

Instructions

  • Season the fish with salt and pepper. 
  • Toss other ingredients and press on top of the filets.
  • Place in a baking dish and bake at 400 for 20 minutes or until sweet potatoes are tender.
