  • 12oz pkg Coleson’s Catch Salmon Fillet thawed
  • 6 pcs Kumquats sliced
  • 2 c Spinach Leaves shredded
  • 2 Tbsp Shallots
  • 1 Tbsp Butter
  • ½ c Heavy Cream
  • Salt and Pepper to taste

  • 12oz pkg Coleson’s Catch Salmon Fillet thawed
  • 6 pcs Kumquats sliced
  • 2 c Spinach Leaves shredded
  • 2 Tbsp Shallots
  • 1 Tbsp Butter
  • ½ c Heavy Cream
  • Salt and Pepper to taste
Instructions
  1. Sauté shallots in butter until clear; add kumquats and heavy cream, cook until it is thick.
  2. Add spinach, simmer until spinach is limp - check seasonings.
  3. Cook salmon any style - I like poached.
  4. Top with the sauce.  
  5. A grain would go well as a side dish.

  • 12 oz Coleson’s Catch Salmon Fillet thawed
  • ½ c grapefruit juice
  • 1 Tbsp Shallots chopped
  • Salt and Pepper
  • 6 Apricots dried
  • 16 Cherries dried
  • 6 kiwi slices peeled

  • 12 oz Coleson’s Catch Salmon Fillet thawed
  • ½ c grapefruit juice
  • 1 Tbsp Shallots chopped
  • Salt and Pepper
  • 6 Apricots dried
  • 16 Cherries dried
  • 6 kiwi slices peeled
Instructions
  1. Put the juice, shallots, seasonings, and dried fruit in a cooking pan that will be big enough to have the salmon set flat on the bottom. 
  2. Bring to a boil and add the salmon, skin side on top.  Cover and simmer until the salmon is done--it will depend on how thick the fish is but not more than 7 minutes.
  3. Remove the skin while it is in the pan--it will just peel off.
  4. You can serve this flavorful salmon just poached and garnished with the fruit, including the cold kiwi with some greens drizzled with the warm poaching liquid or the liquid thickened with cornstarch as a glaze.
  5. Serve with a side vegetable.

  • 1 c Red Potatoes cooked al dente, diced
  • 1/2 c Yellow Onion diced
  • 1/2 c Celery diced 
  • 4-8 eggs depending on appetite
  • 1/2 c Ham diced
  • 1/2 c Green Bell Pepper
  • 1/2 c Chicken Broth
  • 3-4 Tbsp Butter

Instructions
  1. In a large skillet, melt the butter.
  2. Just as it starts to brown, put in the potatoes and cook over a medium heat until golden brown.
  3. Add the onions and celery, and cook until they just start to tender.
  4. Add the ham and bell peppers; heat them through.
  5. Add chicken broth and salmon, shake pan and stir, cover and cook for 5 minutes.
  6. Shake pan again and set aside.
  7. Cook the eggs any way you enjoy them - I like them poached or sunny side up.
Recipe Notes

Good with sliced tomatoes as a suggested side dish.

Cold Poached Salmon Fillet with Hummus

Cold Poached Salmon Fillet with Hummus

  • 1 pkg Coleson’s Catch Salmon Fillet
  • 1 c garbanzo beans cooked
  • 1/4 c garlic roasted
  • 1 Tbsp Lemon Juice
  • 1/4 c Mild Olive Oil
  • Salt and Pepper to taste
  • 1 c salted Water
  • 1 Tbsp lemon

  • 1 pkg Coleson’s Catch Salmon Fillet
  • 1 c garbanzo beans cooked
  • 1/4 c garlic roasted
  • 1 Tbsp Lemon Juice
  • 1/4 c Mild Olive Oil
  • Salt and Pepper to taste
  • 1 c salted Water
  • 1 Tbsp lemon
Instructions
  1. Bring the water and lemon juice to a boil.
  2. Add the salmon and simmer for 4-6 minutes depending on the thickness. Chill. 
  3. If you are using canned garbanzos-drain and rinse.
  4. Puree in a food processor to a smooth paste before adding anything else-once you start adding stuff it won't get smoother.
  5. Add roasted garlic and lemon and puree.
  6. Add salt and pepper and then slowly add olive oil. Chill. 
Recipe Notes

Serve the chilled Salmon with Hummus on the side.

Sides: Tossed salad and sliced tomatoes and cucumber.

  • 3/4 c Tangerine segments
  • 1 tsp Tangerine zest
  • 1/2 c Pomegranate Seeds
  • 1 1/4 c Red Onion diced
  • 1/2 c White Wine
  • 1/2 c Chicken Broth
  • 1 Tbsp Mint chopped
  • Salt and Pepper
Cook Time 6 minutes

  • 3/4 c Tangerine segments
  • 1 tsp Tangerine zest
  • 1/2 c Pomegranate Seeds
  • 1 1/4 c Red Onion diced
  • 1/2 c White Wine
  • 1/2 c Chicken Broth
  • 1 Tbsp Mint chopped
  • Salt and Pepper
Instructions
  1. Simmer onions in the wine until the wine is almost gone.
  2. Add chicken broth, bring to a boil.
  3. Add the salmon and simmer covered until the salmon is half done, 3 minutes or so.
  4. Add the other ingredients and cover for another 3 minutes.
  5. If it seems dry add more broth.
  6. Adjust seasonings.
Recipe Notes

Serving Suggestions: Rice, bulgur, salad or fresh vegetable such as broccoli.
