Pumpkin Stew With Mahi-Mahi

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi trimmed of skin and  diced into medium pieces
  • 1/2 c Onion diced 
  • 1/2 c Celery diced
  • 3 c Chicken Broth
  • 1/2 tsp Thyme
  • 2 bay leaves
  • 1 c Pumpkin peeled and diced 

Instructions

  • Simmer the ingredients except the Mahi-Mahi until tender.
  • Add the Mahi-Mahi at the end and simmer for 3 more minutes.
  • Adjust seasoning to taste.

Notes

If you want a chunky, brothy stew, add the pumpkin near the end of the cooking. If you want the pumpkin to dissolve and act as a thickener, cook the pumpkin from the beginning.

Coconut Mahi-Mahi Wrap

Ingredients

  • For Fish:
  • 1 pkg Coleson's Catch Mahi-Mahi
  • 1/4 c Coconut Milk
  • 2 Tbsp Red Onion or Shallot Minced
  • 1 Tbsp Lime Juice
  • Salt and Pepper to taste
  • 4 pcs Wrap-style Flour Tortillas no strong flavors
  • For Slaw Filling:
  • 2 qts shredded cabbage (I like Napa but any is okay) 
  • 1 c Finely Shredded Purple Cabbage
  • 1 c shredded spinach
  • 1/2 c Red Onion Diced
  • 1/2 c Carrot Grated
  • 1 c Toasted Coconut
  • 1/2 c toasted almonds
  • 1 c White Raisins
  • For Coconut Lime Dressing:
  • 1/4 c Lime Juice
  • 1/2 c Coconut Milk
  • 1/4 c Coconut Butter
  • 2 Tbsp Shallots Minced
  • Salt and Pepper to taste

Instructions

  • Prepare Fish:
  • Mix all ingredients except fish and tortillas.
  • If you are comfortable removing the skin from raw fish do so, if not, marinate the fish with the skin on and remove the skin after it is cooked.
  • Marinate the fish for at least an hour.
  • Cook the Mahi-Mahi on the grill--it will take 6-8 minutes to cook.
  • Prepare Slaw Filling:
  • Place in a bowl large enough and easily toss ingredients.
  • Prepare Dressing:
  • Mix all ingredients and put in a jar. Shake before using.
  • Assemble Dish:
  • Have all items ready. Toss the slaw with half the dressing to start, add more if needed.
  • Let set while the fish cooks; it will shrink as it waits.
  • Spread out the 4 tortillas and divide the slaw between them.
  • Cut the skinless Mahi-Mahi into thin strips and place on top of the slaw and roll the wrap by tucking in the ends, rolling forward tightly.

Notes

For a heartier meal use 2 pkgs Mahi-Mahi and double the seasonings.

Mahi-Mahi with Corn and Black Bean Salsa

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 1/2 c cooked corn
  • 1/2 c Cooked Black Beans
  • 1/4 c Red Bell Pepper Diced
  • 1/4 c Green Onion Chopped
  • 2 Tbsp Lime Juice
  • 2 Tbsp chopped cilantro
  • 1/2 tsp Red Chilies Crushed
  • Salt and Pepper

Instructions

  • Toss everything together except the Mahi-Mahi.
  • Chill for 1 hour or longer.
  • Cook the Mahi-Mahi in any method desired.
  • Place Mahi-Mahi on a bed of salsa or pour salsa over it.

Notes

Serve with a salad - the salsa is great on greens.

Jamaican Jerk Mahi-Mahi

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 2 Tbsp grated ginger
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp Green Onion Chopped
  • 1/2 tsp Ground Allspice
  • 1/4 c Chicken Broth
  • 1/2 habanero pepper Chopped
  • Salt and Pepper

Instructions

  • To make the marinade, mix all the ingredients except the Mahi-Mahi.
  • The marinade can be made in a blender, food processor or chopped by hand. Of course you can make it hotter if you like spicy.
  • A bit of the marinade can be set aside and used as a kind of salsa on the fish. 
  • Cook the fish over a natural wood flame and add whole allspice berries to the flame to add more flavor.

Notes

The marinade used on the fish can be boiled and used as a sauce. There are many ways to cook this dish - some people simmer or bake the fish in the marinade but then you lose the benefit of cooking over an open flame.  In Jamaica they use the wood from the pimento tree which grows the pimento berries, marketed as allspice berries.

Mahi-Mahi with Apples and Cranberries

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Mahi-Mahi
  • 2/3 c Fresh Cranberries
  • 2/3 c Green firm Cooking Apple - Pippin diced
  • 1 Tbsp Fresh Ginger grated
  • 1/2 tsp Cinnamon
  • 1/2 c raisins
  • 1/2 c Yellow Onion diced
  • 2 Tbsp Butter
  • 1/2 c Chicken Broth
  • 1/3 c Honey
  • Salt and Pepper

Instructions

  • Sauté onions in butter until clear.
  • Add apples and lightly sauté - it is okay if they brown a little but don't let them get soft.
  • Add chicken broth, ginger, cinnamon, raisins, salt, pepper and honey. Bring to a boil.
  • Add cranberries and simmer until they burst (it will happen fast) and take off heat. 
  • Cook the Mahimahi, any style. Serve together 
  • Serve with a side salad.
