Stone-Ground Mustard Ahi Tuna with Spinach and Pine Nuts

Ingredients
- 1 pkg Coleson’s Catch Ahi Tuna thawed
- 2 Tbsp Stone Ground Mustard
- 4 c Spinach Leaves
- 1/3 c Red Onion diced
- 1/4 c Chicken Broth
- 1/4 c pine nuts toasted
- Salt and Pepper
Instructions
- In a saute pan simmer the onions until tender.
- Add spinach and toss lightly and remove.
- Season with salt and pepper.
- Season the Ahi Tuna with salt and pepper, spread with the mustard and bake at 400° for 5 minutes.
- Toss the pine nuts with the spinach just before serving.
Cajun Ahi Tuna with Jicama
Cajun Ahi Tuna with Jicama
Servings 2 People
Ingredients
- 1 pkg Coleson’s Catch Ahi Tuna thawed
- 2 Tbsp Cajun seasoning*
- 1 tsp garlic finely chopped
- 2/3 c Tomatoes diced
- 1 1/2 c Jicama peeled and julienne-cut
- 2 tbsp Lime Juice
- Salt and Pepper
- 1/4 c Parsley chopped
Instructions
- Have the jicama ready: cut and toss with lime juice, salt and pepper.
- Season Ahi with salt and pepper and coat with the Cajun seasonings and garlic.
- In a sauté pan put aproximately 1/4 inch of water and bring to a boil.
- Add Ahi and simmer on each side for 1 minute.
Notes
Put the Ahi on top of the jicama, pour what is left of the liquid over the fish, and top with diced tomatoes and chopped parsley.
Tuna with Poppy Seeds, Yogurt and Hard Boiled Eggs
Tuna with Poppy Seeds, Yogurt and Hard Boiled Eggs
Servings 2 People
Ingredients
- 1 pkg Coleson’s Catch Ahi Tuna
- 1+ Tbsp Poppy Seeds
- 1/2 c Yogurt
- 2 Tbsp Red Onion minced
- 1/4 c Cucumber diced
- 1 pc Hardboiled Egg grated
- 1 tsp. Dill chopped (fresh, if possible)
- Salt and Pepper to taste
Instructions
- Mix the ingredients from the yogurt down the list, set aside.
- Salt and pepper the tuna steaks.
- Press the poppy seeds onto the tuna steaks, coating them well.
- Pan sear the Tuna Steaks in hot oil, cooking them rare.
- Top with sauce.
Notes
Serving Suggestions: Sides: Bulgur, rice, couscous or quinoa. Additional Comments: I like to use plain, non-fat Greek yogurt.

Tuna with Carrot Raisin Salad
Servings 2 People
Ingredients
- 12 oz pkg Coleson’s Catch Ahi Tuna
- 2/3 c Carrots grated
- 1/3 c Pineapple diced
- 1/3 c Coconut shredded
- 1/4 c raisins
Instructions
- Toss all ingredients except the fish and chill.
- Cook the tuna the method you like-I like either with a flame on pan seared remembering to keep it rare.
- Over cooked tuna is dry tuna.
- You can place the salad on the plate and top with the fish; put it on top of the fish like a salsa or the side like a salad.
Notes
It is good to make the salad an hour or more ahead of time.
