Mussels With Cream And Capers

Ingredients

  • 1 pkg Coleson's Catch Kono Mussels on Half Shell
  • 1/2 c Onion diced
  • 1 Tbsp chopped garlic
  • 1/4 c dry sherry
  • 1 pint Heavy Cream
  • 1 tsp Lemon Juice
  • 1/4 c capers 
  • Black Pepper
  • 1 c baby spinach

Instructions

  • In a medium saucepan, simmer the onion and garlic in the sherry until the sherry is almost gone.
  • Add cream and reduce to the desired thickness.
  • Add the lemon, capers, and pepper.
  • Bring back to a boil and remove from heat.
  • In a large saucepan, boil enough water to cover the mussels.
  • Plunge the mussels into the water for one minute, drain, and place in a large bowl.
  • Cover with the sauce, add spinach, and toss to wilt.

Notes

Serving Suggestions: All you need now is a great loaf of bread and a salad.

Calamari Steaks Marinara

Servings 4 People

Ingredients

  • 2 12oz. pkg Coleson's Catch Calamari Steaks
  • 2/3 C Flour
  • 1/4 C butter or oil
  • For marinara:
  • 2 c tomato puree
  • 1/2 c Onion diced
  • 2 Tbsp chopped garlic
  • 2 Tbsp olive oil
  • 1/2 c chopped basil
  • 2 tsp Italian seasoning
  • 2 c Spinach Leaves

Instructions

  • Sauté the onion and the garlic in the olive oil.
  • Add the tomato puree, basil, and Italian seasoning.
  • Simmer for 20 minutes; add the spinach and simmer for 5 minutes.
  • Season the Calamari Steaks with salt and pepper, dust with flour, and saute in hot oil or butter.
  • Top with the marinara sauce.

Notes

Serve with pasta and a Parmesan garnish.

Tuscan-Style Calamari Linguini

Ingredients

  • For every pound of Coleson's Catch Calamari:
  • 2 Tbsp. chopped garlic
  • 2/3 Tbsp. olive oil
  • 1 tsp. Thyme
  • 1/4 c capers 
  • 1-1/2 c diced tomatoes
  • 1/2 c dry white wine
  • 1/2 c Chicken Stock

Instructions

  • Clean squid by pulling out the viscera including cartilage.
  • Rinse in cold water and cut into half inch rings. Blot dry with paper towel.
  • Saute onions in olive oil until soft and translucent.
  • Add the thyme, garlic, capers and tomatoes and saute until the tomatoes are soft.
  • Add the liquids and bring to a boil, then simmer for 5 minutes.
  • Add the cleaned and sliced squid (cut into rings and leave the tentacles whole) and simmer for 2-3 minutes.
  • Don't overcook. The squid is done when it turns opaque white.

Notes

Pour over warm Linguini.

Sauteed Calamari Nicoise

Ingredients

  • For every pound of Coleson's Catch Calamari:
  • 1 Tbsp. chopped garlic
  • 1/2 c diced onion
  • 2 Tbsp. olive oil
  • 1 c diced tomato
  • 1 Tbsp. Italian seasoning
  • 1/4 c sliced black olives
  • Salt and Pepper to taste

Instructions

  • Clean squid by pulling out the viscera including cartilage.
  • Rinse in cold water and cut into half inch rings. Blot dry with paper towel.
  • Saute the onion and garlic for approximately 5 minutes.
  • Add basil, tomato and seasonings and cook 10-15 minutes.
  • Add the squid and cook for 2 minutes (don't overcook).

Notes

Serve over Creamy Polenta.

Creamy Polenta

Creamy Polenta

Servings 2 People

Ingredients

  • 1 c. Cornmeal
  • 3 c chicken stock
  • 2 Tbsp. chopped garlic
  • 2 Tbsp. chopped basil
  • 1/2 c Parmesan cheese
  • 1 tsp. salt
  • 1/2 c heavy cream

Instructions

  • In a sauce pan, combine chicken stock, garlic, basil and cornmeal, using a whisk to thoroughly mix ingredients.
  • Cook over medium heat, stirring regularly.
  • As it comes to a boil, it will thicken; cook for another 15 minutes until the mixture is smooth. (Add water if the mixture becomes too thick..)
  • Add the cheese and the cream, and continue to cook until the cheese is melted.

Notes

Serve under sauteed Calamari Nicoise.
