Slipper Lobster Tail with Roasted Butternut Squash
Servings 2 People
Ingredients
- 1 pkg Coleson's Catch Slipper Lobster Tail split
 - 2 Tbsp Butter melted
 - 1/4 tsp Nutmeg
 - Salt and Pepper
 - 2 c Butternut Squash peeled & diced
 - 2 Tbsp Butter melted
 - 1/2 tsp Nutmeg
 
Instructions
- Toss diced squash with salt, pepper, nutmeg and butter.
 - Put on a sheet pan large enough to be a single layer.
 - Bake at 400°F until golden brown about 20 minutes.
 - Sprinkle salt, pepper and nutmeg on the lobster meat and brush with butter.
 - If possible cook lobster tail over an open flame or bake with the squash except that it will not take 20 minutes more like 10-12.
 - Serve with side salad.
