Ingredients

  • Plain focaccia bread
  • butter Melted
  • garlic chopped
  • Parmesan cheese
  • parsley chopped

Instructions

  • I buy plain focaccia bread and spread it with melted butter, chopped garlic, Parmesan cheese and chopped parsley and bake at 400 for 7-10 minutes.
  • There are many good recipes if you want to bake your own.

Curried Butternut Squash

Curried Butternut Squash

Servings 2 People

Ingredients

  • 4 c butternut squash diced
  • 2/3 c chicken or vegetable broth
  • 1/2 c yellow onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp Butter

Instructions

  • Bring the broth to a boil with the onion and curry.
  • Add the butternut squash and cover.
  • Cook until tender, add butter.
  • I like it chunky but it can also be served pureed.
  • Season with salt and pepper.

Dessert Polenta

Dessert Polenta

Course Dessert
Servings 2 People

Ingredients

  • 2 c Milk
  • 1/2 c Sugar
  • 1 c cornmeal
  • Topping:
  • 2 Tbsp Butter
  • 3/4 c brown sugar
  • 1/2 c Heavy Cream
  • 2 c Fruit sliced or diced

Instructions

  • Simmer ingredients until smooth and creamy, stirring constantly.
  • Top with something yummy! Maybe ice cream or...caramel... pears, apples or bananas.

Notes

Topping:
Bring topping ingredients to a boil and simmer until it starts to thicken. Add 2 c. sliced or diced fruit, bring to a boil and simmer until tender. Adding a bit of cinnamon, vanilla, rum or brandy is nice.

Baked Stuffed Milkfish

Baked Stuffed Milkfish

Ingredients

  • 1 Coleson's Catch Whole Milkfish cleaned and scaled
  • 2 Tbsp. Butter
  • 1 large tomato diced
  • 1 medium onion chopped
  • 2 Green Onions chopped
  • 1 lemon sliced
  • Salt and Pepper to taste

Instructions

  • Rub both sides and inside of Milkfish with lemon slices; then sprinkle with salt and pepper.
  • Mix the tomatoes, onion, green onions and season with salt and pepper.
  • Place the mixture inside the stomach cavity and secure with skewers (or sew the opening with large needle and thread).
  • Preheat oven to 400 degrees F. Brush both sides of fish with melted butter and place in a baking dish that has been lined with greased aluminum foil.
  • Bake for about 30 minutes, basting with butter as the fish cooks.
  • Fish is done when it starts to flake easily.

Notes

Milkfish contains many small bones.

Enchiladas with Shrimp and Green Sauce

Enchiladas with Shrimp and Green Sauce

Ingredients

  • 1 Lb. Coleson's Catch 26/30 EZ Peel Shrimp
  • 1 pkg Corn Tortillas
  • 2-3 c Green Enchilada Sauce
  • 2 c Jack Cheese grated
  • 2 Tbsp Butter
  • 2 c Yellow Onion diced
  • 1/2 c Black Olives sliced
  • 1/2 c Cilantro chopped

Instructions

  • Peel shrimp and lightly saute in half the butter, set aside.
  • Saute the onions in the rest of the butter and set aside.
  • Pour some of the enchilada sauce on a deep plate or shallow bowl.
  • Dip both sides of a tortilla in the sauce, place on another plate, and fill with a bit of shrimp, cheese, and cilantro.
  • Roll into a log shape and place in an oblong glass dish that has a bit of sauce on the bottom.
  • Repeat with remaining tortillas.
  • Pour remaining sauce over the finished dish and sprinkle with cheese and olives.
  • Cover with foil and bake at 350 degrees F. for 40 minutes or until heated through and bubbly.

Notes

For my personal use I find the quality of the canned green enchilada sauce available retail just fine. If you are more of a purist, then feel free to prepare a sauce with fresh green chili peppers. Please note: how much sauce you need will depend on how wet you like your finished product. I use 3 cups.
