Sea Scallops on a Stick with Veggies

Ingredients

  • 10 pcs Coleson's Catch Sea Scallops
  • A combination of veggies: Mushrooms, cherry tomatoes, squash, eggplant, onion, garlic, peppers, snap peas and the such.

Instructions

  • I like to marinate everything - pick any - teriyaki, Italian dressing, a mustard based something-be creative.
  • Put the vegetable & scallops in a skewer.
  • Cook over an open flame.

Notes

Serve with a salad.
Additional Comments:
Cut veggies in small, even sizes so they don't take too long to cook & they will be easy to skewer.

Slipper Lobster Tail with Roasted Butternut Squash

Ingredients

  • 1 pkg Coleson's Catch Slipper Lobster Tail split
  • 2 Tbsp Butter melted
  • 1/4 tsp Nutmeg
  • Salt and Pepper
  • 2 c Butternut Squash peeled & diced
  • 2 Tbsp Butter melted
  • 1/2 tsp Nutmeg

Instructions

  • Toss diced squash with salt, pepper, nutmeg and butter.
  • Put on a sheet pan large enough to be a single layer.
  • Bake at 400°F until golden brown about 20 minutes.
  • Sprinkle salt, pepper and nutmeg on the lobster meat and brush with butter.
  • If possible cook lobster tail over an open flame or bake with the squash except that it will not take 20 minutes more like 10-12.
  • Serve with side salad.

Slipper Lobster Tail Club Sandwich

Ingredients

  • 1 pkg Coleson's Catch Slipper Lobster Tail
  • 4 slices Bread of your choice toasted sourdough maybe
  • Tomatoes sliced
  • Lettuce of your choice
  • Avocado
  • 8 slices bacon cooked the way you like it
  • Your choice of spread: Mayonnaise, thousand island, lemon pepper mayonnaise, cocktail sauce 

Instructions

  • Steam or boil the lobster in the shell 5 minutes or so. Chill the tails.
  • When ready remove from shells and slice. Assemble.
  • Serve with clam chowder.

Roma-style Imitation Crabmeat Sandwiches

Ingredients

  • 2 Tbsp. Butter
  • 1/2 c. Parmesan cheese grated
  • 1 Tbsp. Garlic chopped
  • 8 oz. Coleson's Catch Imitation Crabmeat flakes or chunks
  • Salt and Pepper to taste

Instructions

  • In a sauté pan, melt the butter and allow it to start to turn brown.
  • Sauté the crab, stirring every now and then. You want it to turn a little brown; then add the garlic and toss.
  • Add the cheese and turn off the heat.
  • Divide to 4 quality rolls or Focaccia bread to make sandwiches.

Notes

For a moister and richer product, spread the bread with aioli (garlic mayonnaise) before adding the Crabmeat mixture.

Imitation Crabmeat Stir Fry

Servings 2 People

Ingredients

  • 8 oz. Coleson's Catch Imitation Crabmeat flakes or chunks
  • 1/2 Yellow Onion julienne
  • 1/2 Red Bell Pepper julienne
  • 2 c shredded Napa cabbage or regular green cabbage
  • 2 Tbsp. Ginger grated
  • 1 Tbsp. garlic chopped
  • 2 Tbsp. Soy Sauce
  • 2 Tbsp. Vegetable oil corn or canola
  • 1 Tbsp. Sesame Oil
  • Salt and Pepper to taste

Instructions

  • Heat a sauté pan, add vegetable oil and when hot, add onions and peppers.
  • Stir over medium heat about a minute and add ginger and garlic.
  • Toss in the Crabmeat and cabbage.
  • As the cabbage starts to wilt add the soy sauce and sesame oil.
  • When all is heated through, turn off heat.

Notes

Serving Suggestions: Serve over steamed white rice or Asian noodles.
