Tuna with Sweet Potato and Tangerine

Tuna With Sweet Potato And Tangerine

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Yellowfin/Ahi Tuna
  • 1-1/2 c Sweet Potato diced
  • 1/3 c Red Onion diced
  • 2 Tbsp white wine vinegar
  • 2 Tbsp light oil
  • 2 Tbsp Honey
  • 1 tsp chopped fresh tarragon or 1/4dried tarragon
  • 2 tangerines-peeled and diced 

Instructions

  • Boil or steam the sweet potato al dente and cool.
  • Toss the other non-fish ingredients together and chill for a couple of hours.
  • Cook the tuna medium-rare, either over an open flame or seared in a hot pan.
  • Use the potato mixture as either a base or a topping.

Notes

Side dish suggestion--green salad.

Tuna with Fuyu Persimmon and Ginger

Tuna With Fuyu Persimmon And Ginger

Ingredients

  • 12 oz pkg Coleson's Catch Yellowfin/Ahi Tuna
  • 1 Tbsp Butter
  • 1 tsp fresh grated ginger or 1/8powdered ginger
  • 1/2 c Onion diced
  • 2 Fuyu persimmons
  • Splash of water or chicken broth
  • Salt and Pepper

Instructions

  • Remove the green top of the persimmons and cut in half lengthwise, then cut in 1/4 inch half circles starting at the top.
  • In a medium saute pan, melt the butter and cook the onions until tender; remove from pan.
  • Place the fruit flat side down in the pan--don't just toss them in.
  • Cook on one side until they start to color.
  • Add the onions, ginger, liquid, salt, and pepper.
  • Toss lightly, let simmer for 30 seconds, and it's ready.
  • Cook the tuna any style--open flame is best, pan seared second.

Notes

Tuna must be served medium rare. Pour the fruit over the top. Would be great with lentils and any grain.

Swordfish with Spicy Eggplant

Ingredients

  • 12 oz Coleson's Catch Swordfish Steaks marinated
  • Marinade for Swordfish:
  • 1 tsp. chopped garlic
  • 1 tsp. chopped basil
  • 2 Tbsp. White Wine
  • 1 Tbsp. olive oil
  • Spicy Eggplant:
  • 2 Eggplant diced
  • 1 Onion
  • 2 Tbsp. chopped basil
  • 2 Tbsp. chopped garlic
  • 1/2 tsp. crushed chilies
  • 1/2 tsp. Salt
  • 1/2 tsp. pepper

Instructions

  • Marinate Swordfish.
  • For eggplant, sauté all ingredients in 1/4 c. olive oil until completely cooked, approximately 20 minutes.
  • Add 1/4 to 1/2 c. chicken stock.

Braised Swordfish with Pomegranate and Pears

Ingredients

  • 4 pieces Coleson's Catch Swordfish Steaks
  • 1/2 c Green Onion diced
  • 1/3 c pomegranate juice
  • 1/3 c red wine
  • 1 Tbsp Orange Zest
  • 1/4 c chopped fresh mint
  • 1/4 c Honey
  • 1/2 tsp Allspice
  • 2 c peeled sliced firm pear
  • Salt and Pepper

Instructions

  • Salt and pepper the swordfish and sear in hot oil to brown both sides.
  • Place into a glass-baking dish and top with the pear slices.
  • Bring the remaining ingredients to a boil and pour into baking dish, cover and bake for 20 minutes in a 400 degree oven.

Salmon with Cajun Cream

Ingredients

  • 1 pkg Coleson's Catch Salmon Steaks
  • 2 tsp. chopped garlic
  • 1/4 c. Chicken Stock
  • 1 c. Heavy Cream
  • 2 Tbsp. catsup
  • 1 - 2 Tbsp. Cajun seasoning* 2 is spicy!
  • 1/2 c. fresh diced tomatoes
  • 1 Tbsp. chopped parsley

Instructions

  • Combine top ingredients and simmer until sauce is to the desired thickness.
  • Pour over Salmon prepared to your liking.
  • Top with tomatoes and parsley.
