Tuna Steaks with Cantaloupe and Port Spinach Salad

Ingredients

  • 12 oz pkg Coleson’s Catch Ahi Tuna
  • 2 c Cantaloupe diced
  • 1 c Port Wine
  • 1/4 c Dried Apricot diced
  • 1/4 c Golden Raisins
  • 1 Tbsp Mint chopped
  • Salt and Pepper
  • 1/4 c Pistachios chopped
  • 2 c Baby Spinach Leaves

Instructions

  • One day before, marinate the cantaloupe, dried fruit and mint in the port with a pinch of salt and a bit more than a pinch of pepper. Refrigerate.

Swordfish with Pesto Aioli

Ingredients

  • 1 pkg Coleson's Catch Swordfish Steaks
  • 3 egg yolks
  • 2 Tbsp. garlic chopped
  • 1/4 c. fresh basil chopped
  • 2 Tbsp. pine nuts
  • 2 Tbsp. Parmesan cheese
  • 1 c. olive oil
  • Salt and Pepper

Instructions

  • Place all ingredients except olive oil and swordfish into a blender.
  • Turn the blender on low and slowly add olive oil.
  • Adjust salt and pepper to taste.
  • Marinate swordfish in basil, garlic, and olive oil. Broil.

Cajun Swordfish with Cajun Tartar Sauce

Servings 2 People

Ingredients

  • 12 oz Coleson's Catch Swordfish Steaks
  • 1/4 c. Cajun seasoning*
  • Cajun Tartar Sauce:
  • 2/3 c. Mayonnaise
  • 2 Tbsp. finely diced onion
  • 2 Tbsp. diced celery
  • 1 Tbsp. chopped capers
  • 2 Tbsp. pickle relish
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Cajun seasoning*

Instructions

  • Dust Swordfish with Cajun seasoning and sauté.
  • Top with Cajun Tartar Sauce, fresh diced tomatoes, and chopped parsley.

Swordfish with Braised Cabbage

Ingredients

  • 4 Coleson's Catch Swordfish Steaks
  • 8 cups finely shredded red cabbage
  • 1/4 cup minced shallots
  • 2 Tbsp. minced garlic
  • 1 Tbsp. ground juniper berry   may substitute caraway or fennel seed
  • 1 tsp. Thyme
  • 2 Tbsp. Oil
  • 3/4 cup red wine
  • 2 Tbsp. Cornstarch

Instructions

  • Season the fish with salt and pepper, sear in a hot pan and place in a glass baking dish.
  • Sauté the shallots and garlic in the oil and add the cabbage, juniper, thyme and wine.
  • Cook, covered, until the cabbage is tender, stirring often.
  • The cabbage may release a lot of liquid.
  • If there is too much liquid, continue to cook until it reduces, or pour some off.
  • If it is a bit dry, add water.
  • Add salt and pepper to taste.
  • Stir a bit of water into the cornstarch and add to dish to thicken.
  • Pour over the swordfish and cover.
  • Bake at 400° for 20 minutes.

Notes

Cilantro and Spanish Olive Pasta with Swordfish

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Swordfish Steaks
  • 4 cups cooked pasta
  • 1/4 c chopped cilantro
  • 1/2 c sliced pimento stuffed green olives
  • 1 sliced red onion
  • 1 sliced red bell pepper
  • 2 Tbsp garlic
  • 1 c Chicken Broth
  • 2 Tbsp olive oil

Instructions

  • Cook the swordfish your favorite way and set aside. (refer to package instructions)
  • Sauté the onion, pepper and garlic in the olive oil, add the cilantro and chicken broth, and bring to a boil.
  • Toss with the pasta.

Notes

Separate the pasta into 4 bowls and top with the swordfish. Garnish with grated Parmesan cheese.
