Fruit Salad

Instructions

  • People love fruit salad. I have found that the smaller you cut the fruit the more they eat. I'm not sure why but it seems to work out that way.
  • The least amount of fruit will be eaten if you leave whole fruit in a bowl, apples, oranges, bananas and grapes.
  • You will need a moderate amount if you peel, slice and place on a platter melon, pineapple, and kiwi and arrange with strawberries and grapes.
  • You will need a lot of diced fruit salad.
  • The larger variety of fruit the more you will serve.

Cucumber Salad II

Course Salad

Ingredients

  • 2 c Cucumber peeled, seeded and sliced
  • 1 c green peas
  • 1 Red Bell Pepper diced (roasted or raw whichever you prefer)
  • 2 c shredded romaine
  • A splash of favorite vinaigrette

Instructions

  • Assemble all ingredients, toss and serve.

  • 1/2 c diced red onion
  • 2 c shredded romaine lettuce

  • A light toss of favorite vinaigrette.

Savory Spinach Salad

Ingredients

  • 1 c Spinach Leaves
  • 4-6 pieces Artichoke Hearts
  • 1 sliced Hearts of Palm
  • 1/3 c Feta Cheese crumbled
  • 6 pcs Kalamata Olives
  • 1/4 c  Roasted Tomatoes diced
  • 1/4 c  Sauteed Mushrooms sliced
  • Garlic Croutons

Instructions

  • Mix all ingredients in a bowl and garnish with garlic croutons. Serve.

Classic Fresh Mozzarella Salad

Classic Fresh Mozzarella Salad

Course Salad
Servings 2

Ingredients

  • A large crisp green leaf lettuce leaf
  • 3 Thick slices Ripe Tomato
  • 3 Thick slices Mozzarella cheese
  • A generous sprinkle of salt and pepper
  • 6 Large leaves Basil sliced very thinly
  • A generous splash of extra virgin olive oil

Instructions

  • Mix all ingredients.

Notes

Variations: Sliced red onion, feta cheese, Kalamata olives, a splash of balsamic vinegar, a squeeze of lemon.
Additional Comments: Serving suggestion:
Cold poached salmon, halibut, scallops or calamari steaks could accompany this salad, as could a cold broiled swordfish steak.
