Hot Avocados Stuffed with Imitation Crab Meat

Ingredients

  • 3 C Coleson's Catch Imitation Crab Meat Salad Chunks
  • 2 Tbsp Butter
  • 1/2 c Onion diced
  • 2 Tbsp Flour
  • 1 c hot milk
  • 1/2 Tsp Worcestershire sauce
  • 2 Tbsp Cilantro diced
  • 1/4 Tsp Salt
  • 1/4 Tsp pepper
  • 3 avocados
  • 3/4 c jack and cheddar cheese mix

Instructions

  • Melt the butter and saute the onion, stir in the flour and add the milk.
  • Stir until thick Add seasoning, cilantro and the imitation crab.
  • Cut the avocados in half and remove the seeds.
  • Fill the centers with the mixture and sprinkle with the cheese.
  • Place in a well- greased baking dish and bake for 20-25 minutes at 350F.

Ingredients

  • 1 pkg. Coleson's Catch Imitation Crab Meat flaked into small pieces
  • 2 Tomatoes diced
  • 1 Red Onion diced
  • 1/2 cup Cilantro chopped
  • 1 Jalapeño minced
  • 2 Tbsp Lime Juice
  • 2/3 c Sour Cream

Instructions

  • Mix all ingredients and refrigerate for 24 hours.

Notes

Garnish with diced avocado, and serve with tortilla chips for dipping.

Southern-fried Imitation Crabmeat Legs

Ingredients

  • 16 oz. Coleson's Catch Imitation Crabmeat legs
  • 1 Egg beaten
  • 2 Tbsp Flour
  • Breadcrumbs
  • salt to taste

Instructions

  • Bread the Crabmeat legs like you would for fried chicken.
  • Salt the Crabmeat, then dip in flour, then egg, then seasoned breadcrumbs and sauté.

Notes

Serve with ranch dressing as a dipping sauce.

Ingredients

  • 12 oz. Coleson's Catch King Crab Legs
  • 1/2 c. dry white wine
  • 1 Tbsp. garlic chopped
  • 1/2 c. Chicken Stock
  • 1 Tbsp. Lemon Juice
  • 2 Tbsp. Parsley chopped

Instructions

  • Simmer the wine, garlic, and chicken stock for 5 minutes.
  • Add the lemon juice, parsley, and crab; heat through.

Notes

Serve as an appetizer with French Bread or as an entree over pasta.

King Crab Legs with Pesto Hollandaise

King Crab Legs with Pesto Hollandaise

Course Appetizer
Servings 2 People

Ingredients

  • 12 oz Coleson's Catch King Crab Legs
  • Hollandaise Sauce:
  • 3 egg yolks
  • 1 tsp. lemon juice
  • 1/2 tsp. Salt
  • 2/3 c. Melted butter
  • Pesto:
  • 1 c. basil leaves
  • 1/2 c. olive oil
  • 1/4 c. garlic
  • 1/4 c. Parmesan cheese grated
  • 1/4 c. pine nut pecans, or walnuts

Instructions

  • Heat crab legs.
  • Hollandaise: In a double boiler, whisk eggs yolks, lemon juice and salt and cook until mixture is custardy and fluffy.
  • Slowly add melted butter, whisking the whole time.
  • Add 1 tablespoon prepared Pesto that has been slightly heated in a microwave or a saute pan.
  • Pesto: Mix ingredients in food processor or blender, or finely chop by hand and stir together.
  • Makes 1 1/4 - 1 1/2 cups.
