Mussels and Scallops with Saffron Broth with Linguini

Course Main Dish
Servings 4 People

Ingredients

  • 1 pkg Coleson's Catch Pacific Delight Mussels on the Half Shell
  • 1 pkg Coleson’s Catch Scallops
  • 1 c +Chicken Broth or White Wine or a mix of both
  • 1 c Tomatoes diced
  • 2 Tbsp Garlic chopped
  • 1 pinch saffron threads
  • 1/2 c Parsley chopped
  • Salt and Pepper
  • 4 c Linguini cooked

Instructions

  • If you want to saute the garlic, you can. You also can just simmer the liquid of choice and the saffron for a few minutes to steep out the flavor from the threads and add the garlic, tomatoes and bring to a boil.
  • Add the scallops with all of its juice and bring to a boil.
  • Add the mussels, meat side down and the parsley.
  • Once it comes to a boil it is ready.
  • Serve over cooked Linguini.

Baked Mussels on the Half Shell with Sun Dried Tomatoes

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Pacific Delight Mussels on the Half Shell
  • 1/2 c Sun Dried Tomatoes diced, reconstituted
  • 1/2 c Olives chopped
  • 2 Tbsp Basil chopped
  • 1 tsp Garlic chopped
  • 1 c Mozzarella Cheese grated
  • Salt and Pepper

Instructions

  • In a bowl, mix all ingredients except mussels to make the filling.
  • Fill the mussels with as much stuffing as will fit and bake at 400F for 15-20 minutes. Serve warm.

Mussels With Coconut and Red Onion

Ingredients

  • 1 pkg Coleson's Catch Mussels on Half Shell
  • 1/3 c Coconut Butter
  • 1/4 c Toasted Coconut
  • 2 Tbsp Minced Red Onion
  • 1/4 tsp Black Pepper
  • 1-2 tsp Lime Juice

Instructions

  • Mix all ingredients and place spoonfuls on top of the mussel meat.
  • Place on a ready grill and heat until the mussel meat is warmed through (10 plus minutes).

  • Blue cheese, Bacon and Sauteed Onion
  • Bacon, Sauteed Onion, Barbeque sauce and Cheddar Cheese
  • Bacon, Sauteed Onion, Jalapeno, Cheddar Cheese
  • Sauteed Onions, Bourbon, Bacon, Black Pepper and Cheddar Cheese Salted Butter, Toasted Almonds, Lemon and Chopped Parsley

Ingredients

  • 1 pkg Coleson's Catch Mussels on Half Shell
  • 1/2 c Diced Cooked Bacon
  • 1/2 c sautwed Onion
  • 2 Tbsp chopped basil
  • 2/3 c Mozzarella
  • 1/2 c Tomatoes diced
  • 1/2 c Avocado diced

Instructions

  • Toss bacon, onion and basil and place on top of the mussel meat.
  • Top with mozzarella and place on a ready grill.
  • Remove when the cheese is melted and the mussel is heated through (10 plus minutes).
  • Top with the tomatoes and avocado.

Grilled Mussels With Blue Cheese and Walnuts

Ingredients

  • 1 pkg Coleson's Catch Mussels on Half Shell
  • 1/2 c crumbled blue cheese
  • 1 Tbsp balsamic vinegar
  • 1/2 c Chopped Walnuts
  • 1 Tbsp minced shallots
  • 1/4 tsp Black Pepper

Instructions

  • Toss all the ingredients together (except the mussels) and place a couple of spoons of the mixture on top of the mussel.
  • Place on a ready grill until the cheese is melted--remember that blue cheese really doesn't melt that much, but you want to make sure the mussel meat is warm through (10 plus minutes).
