Spicy Pickled Green Beans

Spicy Pickled Green Beans

Course Side Dish

Ingredients

  • 2 qts trimmed green beans
  • 2 qts white wine vinegar
  • 1/2 c Cloves Garlic
  • 1/2 c Pickling spice
  • 1/4 c Salt
  • 1 Tbsp crushed red chilies 

Instructions

  • Combine all ingredients in a stainless steel saucepan and bring to a boil.
  • Turn off heat and let cool, then let chill.

Notes

Serving Suggestions:
Can be eaten as a snack or used as a garnish in salads or beverages.
Additional Comments:
This will keep in the refrigerator for a month.

Fried Eggplant Salad

Fried Eggplant Salad

Course Salad
Servings 4 People

Ingredients

  • 4 large eggplant peeled and diced
  • 1/2 cloves Roasted Garlic
  • 3/4 c olive oil
  • 1/4 c balsamic vinegar
  • 1/4 c Basil finely chopped

Instructions

  • The easiest way to make this salad is to deep fry the eggplant. It only takes a few minutes and the eggplant is evenly browned and tender.
  • If you don't have access to a fryer, then you must sauté it. Turn the eggplant often to brown and get tender.
  • Drain on a paper towel in a colander.
  • Blend the garlic, oil, vinegar, basil, salt and pepper in a blender or food processor.
  • Toss with eggplant and chill.

Notes

Great served on a bed of chopped lettuce and tomatoes. Use as a dip with garlic croutons or fresh vegetables. Makes a good spread on a sandwich or in a wrap.

Ingredients

  • Any seasonal vegetables

Instructions

  • Peel what needs to be peeled, slice, season and oil.
  • Place on a sheet pan and cook at 475 for 20 minutes or until tender.

Notes

Toss with your favorite vinaigrette and chill.

Grilled Vegetable Salad

Gather what you have: a couple of eggplants, some squash, peppers, tomatoes, onions...anything. To grill or to roast, that is the question. I'm using the word grill in this case to mean cook over an open flame. If no open flame method is available then you can roast which can be done in an oven.
Course Salad
Cook Time 20 minutes minutes
Total Time 20 minutes minutes
Servings 2 People

Instructions

  • Peel what needs to be peeled, slice, season and oil.
  • Place on a sheet pan and cook at 475 for 20 minutes or until tender.
  • Toss with your favorite vinaigrette and chill.

Curried Butternut Squash

Curried Butternut Squash

Servings 2 People

Ingredients

  • 4 c butternut squash diced
  • 2/3 c chicken or vegetable broth
  • 1/2 c yellow onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp Butter

Instructions

  • Bring the broth to a boil with the onion and curry.
  • Add the butternut squash and cover.
  • Cook until tender, add butter.
  • I like it chunky but it can also be served pureed.
  • Season with salt and pepper.
