Baked Mahi-Mahi with Mushrooms and Olives

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 2/3 c Mushrooms sliced
  • 1/3 c Black Olives sliced
  • 2/3 c of your favorite pizza or pasta sauce

Instructions

  • Place the mushrooms and olives in a baking dish and put the fish on top.
  • Pour the sauce over, cover and bake at 400° for 20 minutes.

Notes

Good with pasta or garlic bread.

Mahi-Mahi with Pineapple Salsa

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Mahi-Mahi Fillets
  • 2 cups Pineapple diced
  • 2/3 c Red Bell Pepper diced
  • 2/3 c Green Onion chopped
  • Hot Pepper of choice diced, to taste
  • 1/4 c Lime Juice
  • Salt and Pepper to taste

Instructions

  • Mix all ingredients and either serve right away or let the flavors mix for a while.
  • Serve with the Mahi-Mahi cooked in any style.

Mahi-Mahi with Asparagus, Bell Peppers and Dill

Servings 4 People

Ingredients

  • 2 pkg Coleson's Catch Mahi-Mahi thawed
  • 1 cup Red and Yellow Bell Pepper diced
  • 1/2 cup Onion diced 
  • 1 cup Asparagus sliced
  • 1/2 cup Fresh Dill chopped
  • 1/2 cup Chicken Broth
  • 1/2 cup Butter
  • Salt and Pepper to taste

Instructions

  • Cook the Mahi-Mahi any style (pan fry, baked, broiled).
  • Sauté the bell pepper and onion until tender.
  • Add the chicken broth, dill and asparagus and bring to a boil.
  • When the asparagus is tender add the butter; when the butter is melted it is done.

Notes

One way to cook the Mahi-Mahi is to add it to the sauce and simmer until cooked. This adds extra flavor to the fish.

Mahi-Mahi with Lemon and Cucumber

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi thawed, skinned
  • 1 c Cucumber peeled, seeded, diced 
  • 1 lemon zest and juice 
  • 1/2 c Red Onion diced 
  • 2 Tbsp Basil chopped 
  • 1 Tbsp garlic chopped 
  • 1/4 c Red Bell Pepper diced 
  • Salt and Pepper
  • 3 c Lettuce mixed variety

Instructions

  • Either poach or grill the Mahi-Mahi.
  • Mix the rest of the ingredients except the lettuce and marinate a bit.
  • Toss half of the cucumber mixture with the lettuce and put on the plate; place Mahi-Mahi on top and then top with the rest of the mixture.

Notes

If you want to splurge fat-wise, feta cheese and kalamata olives are great.

Curried Mahi-Mahi with Tomatoes and Garlic

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi thawed, skinned, seasoned with salt and pepper
  • 1 Tbsp Curry Powder
  • 1 Tbsp garlic chopped 
  • 1/2 c Chicken Broth
  • 1/2 c Tomatoes diced
  • Salt and Pepper
  • Parsley chopped

Instructions

  • Dredge the Mahi-Mahi in curry powder.
  • In a saute pan, bring the chicken broth and garlic to a boil.
  • Add the Mahi-Mahi and the tomatoes, simmer for 5 minutes.

Notes

Traditionally served with rice but if you want to forego the starch, use shredded iceberg lettuce instead. It has a great crunch that holds up when hot. Don't forget the chutney!
