Broiled Half Shell Mussels with Herb Butter

Ingredients

  • For every pound of Coleson's Catch Mussels: (half of the box's contents)
  • 1/2 c. salted butter softened
  • 2 Tbsp. Lemon Juice
  • 1 Tbsp. chopped garlic
  • 1 Tbsp. chopped basil
  • 1/4 tsp. Black Pepper

Instructions

  • Mix all ingredients and place a spoonful on top of each mussel.
  • Bake in the oven at 350 or barbecue for approximately 8 minutes or until thoroughly heated.
  • Be careful not to cook too long or the mussels will become tough.

Mussels With Cream And Capers

Course Appetizer

Ingredients

  • 1 pkg Coleson's Catch Kono Mussels on Half Shell
  • 1/2 c Onion diced
  • 1 Tbsp chopped garlic
  • 1/4 c dry sherry
  • 1 pint Heavy Cream
  • 1 tsp Lemon Juice
  • 1/4 c capers 
  • Black Pepper
  • 1 c baby spinach

Instructions

  • In a medium saucepan, simmer the onion and garlic in the sherry until the sherry is almost gone.
  • Add cream and reduce to the desired thickness.
  • Add the lemon, capers, and pepper.
  • Bring back to a boil and remove from heat.
  • In a large saucepan, boil enough water to cover the mussels.
  • Plunge the mussels into the water for one minute, drain, and place in a large bowl.
  • Cover with the sauce, add spinach, and toss to wilt.

Notes

Serving Suggestions: All you need now is a great loaf of bread and a salad.

Seared Rare Tuna with Cucumber Salsa and Wasabi Vinaigrette

Ingredients

  • Cucumber Salsa:
  • 1/2 cup seeded English cucumber diced
  • 1/2 cup Red Onion diced
  • 1/2 cup Red Bell Pepper
  • 2 tsp. Rice Wine Vinegar
  • 1/2 tsp. Lemon Juice
  • 2 Tbsp. olive oil
  • Wasabi Vinaigrette:
  • 1 egg yolk
  • 1 Tbsp. Wasabi paste
  • 2 Tbsp. Rice Wine Vinegar
  • 1 Tbsp. Lemon Juice
  • 1/3 cup olive oil

Instructions

  • Cucumber Salsa: Combine all ingredients and marinate overnight in the refrigerator.
  • Wasabi Vinaigrette: Put the first 4 ingredients in a blender or food processor. Slowly add oil as you blend to form a thick paste. Add salt and pepper as desired.
  • Tuna Preparation: Coat the tuna with a generous amount of ground black pepper (the entire surface area). In a hot saute pan, sear each side of the tuna ever so slightly. The fish should remain raw. Chill.

Notes

Slice thinly and garnish with salsa and vinaigrette.

Ingredients

  • 12 oz. pkg. Coleson’s Catch Tuna Steaks
  • Marinade:
  • 1/4 c achiote annatto paste
  • 2 Tbsp Lemon Juice
  • 1 Tbsp chopped garlic
  • 1/4 tsp Salt and Pepper

Instructions

  • Mix marinade ingredients. Marinate tuna for at least an hour, turning occasionally. Grill.

Tuna with Pomegranate

Course Main Dish
Servings 2 People

Ingredients

  • 12 oz Coleson’s Catch Tuna Steaks
  • Marinade:
  • 1/4 c Lemon Juice
  • 1/4 c pomegranate juice
  • 1/4 tsp Salt and Pepper
  • 1/2 c Red Onion diced
  • 1/4 c water
  • 1/4 c chopped basil

Instructions

  • Thinly slice the tuna and marinate for 24 hours.
  • Garnish with pomegranate kernels when in season.
  • Chopped apple and or oranges would be good additional ingredients.

Notes

I like it with crumbled blue cheese and sweet baguette.
