Audrey's Winter Dream Salad I

Course Salad

Ingredients

  • 4 cups Iceberg Lettuce chopped 
  • 1 c Cherry Tomatoes halved 
  • 1 c Blue Cheese crumbled 
  • 1 c Bay Shrimp cooked & chilled 
  • 1/3 c balsamic vinegar
  • 1/2 c olive oil

Instructions

  • In individual bowls, divide in this order: the lettuce, tomatoes, blue cheese, bay shrimp, vinegar and oil. Serve.

Notes

Winter for some reason makes me want a crunchy salad. There are a lot of lettuce snobs out there, but not me; I want iceberg lettuce. If you can't make yourself use the lowly iceberg lettuce, use romaine as it is crunchy, too.

Winter Fruit Salad

Course Salad
Servings 2 People

Ingredients

  • 1 c. Pomegranate Seeds
  • 1 c. Persimmon diced
  • 1 c. Tangerine segments
  • 1 c. Kiwi sliced

Instructions

  • Put the pomegranate seed in a bowl and crush them a bit to release some of the juice.
  • Toss the rest of the ingredients and chill.

Fruity Spinach and Napa Cabbage Salad

Course Salad
Servings 2 People

Ingredients

  • 1 c Spinach Leaves
  • 1/2 c Napa cabbage finely shredded
  • 1/2 c Fruit diced
  • 1/4 c Toasted Nuts
  • 1/4 c Dried fruit
  • Honey Dressing

Instructions

  • Combine in a bowl and drizzle with Honey Dressing.

Notes

Additional Comments:
Berries, mangoes and papayas are my favorite fruit to incorporate into a salad. Grapes, apples, and melons are also good. A dried fruit and a nut are critical. Most fruits are now available dried. We have raisins, cranberries, apricots, dates, mango, papaya, currents, pineapple, apples, pears and peaches. And the nuts! There are pine nuts, pecans, walnuts, Brazil nuts, peanuts, cashews, macadamia nuts, almonds, hazelnuts and more. Nuts always taste better toasted.

Root Vegetable Salad

Course Salad

Ingredients

  • 3 c cooked mixed root vegetables diced (steamed or boiled carrots, celery root, parsnip and rutabaga)
  • 1 c green peas
  • 1/2 c Red Onion diced
  • 1 c. Mayonnaise
  • 1 tsp seasoning salt
  • 3 hard-boiled eggs diced

Instructions

  • Once vegetables are cooled mix all ingredients.

Jicama Salad

Course Salad

Ingredients

  • 4 c shredded jicama
  • 1/2 c Lime Juice
  • 2 tbsp Chili Powder
  • Salt and Pepper

Instructions

  • Toss ingredients together and chill.
