Design Your Own Croutons

Croutons

You need a type of fat and some flavoring. Design your own. Use olive oil, sesame oil or melted butter. Regular salt, seasoning salt, fresh herbs, dried herbs, fresh garlic, garlic salt, liquid smoked, soy sauce, etc. Get any combination--to the max or simple. A plain bread-and-butter crouton is a delight in a delicate salad. A soy-and�sesame-oil crouton works in a Napa cabbage Asian salad.

Servings 2 People

Ingredients

  • Stale bread
  • Oil or butter

Instructions

  • It is best to slow cook to get it crisp and not burnt. Bake at 325 degrees for 20 minutes.

Notes

Use any bread that is stale before it molds. Once the croutons are cooked, they keep in an airtight container for weeks.

Fruity Spinach and Napa Cabbage Salad

Fruity Spinach and Napa Cabbage Salad

Course Salad
Servings 2 People

Ingredients

  • 1 c Spinach Leaves
  • 1/2 c Napa cabbage finely shredded
  • 1/2 c Fruit diced
  • 1/4 c Toasted Nuts
  • 1/4 c Dried fruit
  • Honey Dressing

Instructions

  • Combine in a bowl and drizzle with Honey Dressing.

Notes

Additional Comments:
Berries, mangoes and papayas are my favorite fruit to incorporate into a salad. Grapes, apples, and melons are also good. A dried fruit and a nut are critical. Most fruits are now available dried. We have raisins, cranberries, apricots, dates, mango, papaya, currents, pineapple, apples, pears and peaches. And the nuts! There are pine nuts, pecans, walnuts, Brazil nuts, peanuts, cashews, macadamia nuts, almonds, hazelnuts and more. Nuts always taste better toasted.

Garlic Bread with the Works

Ingredients

  • Loaf of French bread Toppings

Instructions

  • Garlic bread can be a garnish or a meal. If having a complex meal then plain garlic bread is in order.
  • If the meal is simple then jazz it up with the ingredients we have been using: The tasty tidbits can all be piled on the split loaf of French bread smothered with you favorite cheese and popped into the oven.
  • You don't want to duplicate the items in the main course with the items on the garlic bread.
  • Again, you can use any type of fat: olive oil, melted butter, etc. Of course, any cheese.
  • Other items that are good in the mix are olives, artichoke hearts, hearts of palm, caramelized onions, and sun dried tomatoes.

Honey Vinaigrette Dressing

Honey Vinaigrette Dressing

Ingredients

  • 1/2 c Champagne vinegar
  • 2/3 c Olive oil
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 c Honey

Instructions

  • Mix all ingredients. Use hot or cold!

Roasted Peppers

Roasted Peppers

Ingredients

  • bell, jalapeno, etc.

Instructions

  • Rub with oil and cook over an open flame or a char broiler until black on all sides.
  • Put in a zip lock bag to steam.
  • When cool, remove skins and seeds.
  • Will keep for 10 days.
