Ingredients

  • 1 tortilla
  • 2 c Iceberg Lettuce shredded
  • 1/2 c shrimp  cooked
  • 1/4 c Tomatoes diced
  • 1/4 c Cucumber diced
  • 1 hard-boiled egg diced
  • Thousand Island dressing

Instructions

  • Toss all the filling ingredients and roll.

Imitation Crabmeat Louie Wrap

Ingredients

  • 12 oz pkg. Coleson's Catch Imitation Crabmeat thawed
  • 3 c Iceberg Lettuce shredded
  • 2 hard-boiled eggs chopped
  • 2/3 c Tomatoes diced
  • 2/3 c Cucumber diced
  • 1/2 c Thousand Island dressing

Instructions

  • Combine all ingredients.
  • Warm tortillas over a flame, in the microwave or in a sauté pan. 
  • Arrange half of the mixture in the center of the tortilla. Fold in the 2 sides a few inches and roll the tortilla forward to enclose mixture, secure with two toothpicks.
  • Cut in half.

Imitation Crab Meat with Avocado Salad Sandwiches

Ingredients

  • 1 c Coleson's Catch Imitation Crab Meat shredded or diced
  • 2 Tbsp Red Onion diced 
  • 1/2 c Tomatoes diced 
  • 1/2 c Avocado diced
  • 1/2 c Black Olives sliced 
  • 1/2 c Thousand Island dressing
  • Cheddar Cheese shredded or sliced to top
  • 4 slices Sour Dough Bread toasted
  • Parsley chopped

Instructions

  • Gently mix all ingredients except cheese, bread and parsley.
  • Divide the mixture onto the toasted bread and top generously with the cheese.
  • Pop into a toaster oven or oven until cheese is very bubbly.
  • Top with the parsley.
