Servings 2 People

Ingredients

  • 2 c cooked lentils Cook lentils per instruction on package
  • 1/4 c red onion diced
  • 1/4 c Lemon Juice
  • 1/2 c olive oil
  • 1 tsp garlic chopped
  • 1 Tbsp rosemary  chopped
  • Salt and Pepper

Instructions

  • Toss all ingredients the day before. Let chill for several hours.

Ingredients

  • 1 lb lean lamb meat
  • 2/3 cup cranberry juice cocktail
  • 1 Tbsp Lemon Juice
  • 1 Tbsp chopped basil
  • 1 tsp chopped garlic
  • 1 Red Onion
  • Salt and Pepper

Instructions

  • Cut the lamb into uniform pieces and cut the onion into pieces smaller than the lamb and place on the stick in an onion, lamb, and onion pattern.
  • Sprinkle with salt and pepper.
  • Mix the other ingredients and marinate the skewers overnight.
