Roma-style Imitation Crabmeat Sandwiches

Course Main Dish
Servings 2 People

Ingredients

  • 2 Tbsp. Butter
  • 1/2 c. Parmesan cheese grated
  • 1 Tbsp. Garlic chopped
  • 8 oz. Coleson's Catch Imitation Crabmeat flakes or chunks
  • Salt and Pepper to taste

Instructions

  • In a sauté pan, melt the butter and allow it to start to turn brown.
  • Sauté the crab, stirring every now and then. You want it to turn a little brown; then add the garlic and toss.
  • Add the cheese and turn off the heat.
  • Divide to 4 quality rolls or Focaccia bread to make sandwiches.

Notes

For a moister and richer product, spread the bread with aioli (garlic mayonnaise) before adding the Crabmeat mixture.

Mussels and Scallops with Saffron Broth with Linguini

Ingredients

  • 1 pkg Coleson's Catch Pacific Delight Mussels on the Half Shell
  • 1 pkg Coleson’s Catch Scallops
  • 1 c +Chicken Broth or White Wine or a mix of both
  • 1 c Tomatoes diced
  • 2 Tbsp Garlic chopped
  • 1 pinch saffron threads
  • 1/2 c Parsley chopped
  • Salt and Pepper
  • 4 c Linguini cooked

Instructions

  • If you want to saute the garlic, you can. You also can just simmer the liquid of choice and the saffron for a few minutes to steep out the flavor from the threads and add the garlic, tomatoes and bring to a boil.
  • Add the scallops with all of its juice and bring to a boil.
  • Add the mussels, meat side down and the parsley.
  • Once it comes to a boil it is ready.
  • Serve over cooked Linguini.

Baked Mussels on the Half Shell with Sun Dried Tomatoes

Ingredients

  • 1 pkg Coleson's Catch Pacific Delight Mussels on the Half Shell
  • 1/2 c Sun Dried Tomatoes diced, reconstituted
  • 1/2 c Olives chopped
  • 2 Tbsp Basil chopped
  • 1 tsp Garlic chopped
  • 1 c Mozzarella Cheese grated
  • Salt and Pepper

Instructions

  • In a bowl, mix all ingredients except mussels to make the filling.
  • Fill the mussels with as much stuffing as will fit and bake at 400F for 15-20 minutes. Serve warm.
