Mahimahi Fillets Carrots and Coriander

  • 12 oz Coleson’s Catch Mahimahi Fillets, thawed
  • 1 c Carrots grated, par boiled
  • 1 tsp Ground Coriander
  • ½ tsp Ground Ginger
  • Salt and Pepper
  • ¼ c Flour
  • Canola oil

  • 12 oz Coleson’s Catch Mahimahi Fillets, thawed
  • 1 c Carrots grated, par boiled
  • 1 tsp Ground Coriander
  • ½ tsp Ground Ginger
  • Salt and Pepper
  • ¼ c Flour
  • Canola oil
Packaged Mahi-Mahi Fillets - Flash Frozen
Instructions
  1. Gently mix carrots, spices and flour, keeping it fluffy not packed down while mixing.    
  2. Pat dry the Mahimahi, dust with flour and press half the carrots on each piece if evenly sized. Adjust if sizes are very different.
  3. Spread the mixture evenly across the Mahimahi to coat the whole top.
  4. Sauté in hot oil with the carrot side down and cook until golden brown, lower heat and continue to cook until you can see it is half way cooked by the side if the Mahimahi is turning white as the heat moves to the center.  
  5. Turn over and finish cooking.
  6. Serve with a butter lettuce salad with an Asian dressing.

  • 1 pkg Coleson’s Catch Mahimahi Fillets, thawed
  • 1 Tbsp Key Lime Juice
  • 2/3 c Cantaloupe finely diced
  • 1/3 c Strawberries finely diced
  • 1/3 c Blueberries quartered
  • Hot Pepper of choice optional
  • 2 Tbsp Champagne Vinegar
  • 2 Tbsp Chives chopped
  • Salt and Pepper to taste

  • 1 pkg Coleson’s Catch Mahimahi Fillets, thawed
  • 1 Tbsp Key Lime Juice
  • 2/3 c Cantaloupe finely diced
  • 1/3 c Strawberries finely diced
  • 1/3 c Blueberries quartered
  • Hot Pepper of choice optional
  • 2 Tbsp Champagne Vinegar
  • 2 Tbsp Chives chopped
  • Salt and Pepper to taste
Instructions
  1. Season Mahimahi with lime juice, salt, and pepper; coat with oil and cook over an open flame.
  2. Mix all other ingredients and top the Mahimahi with it.
  3. Serve with a side salad.

  • ½ c Yellow Onion diced
  • 2 Tbsp Butter
  • ¼ c Chicken Broth
  • 2 c Butter Lettuce sliced butter lettuce
  • 1 c Baby Peas
  • Heavy Cream splash
  • Salt and Pepper to taste

  • 1 pkg Coleson’s Catch Mahimahi Fillets, thawed
  • ½ c Yellow Onion diced
  • 2 Tbsp Butter
  • ¼ c Chicken Broth
  • 2 c Butter Lettuce sliced butter lettuce

  • Heavy Cream splash
  • Salt and Pepper to taste

Instructions
  1. Season Mahimahi with salt and pepper.  
  2. Melt butter in a saucepan and sear Mahimahi. Add onions sauté until clear.
  3. Add chicken broth and lettuce; cover and cook until lettuce is limp and Mahimahi cooked.  
  4. Remove Mahimahi.  
  5. Add the peas and cream and cook until peas are bright green and al dente, adding more cream if needed.  
  6. Serve vegetable mix over or under Mahimahi with a grain side dish.

  • 12 oz Coleson’s Catch Mahimahi Fillets, thawed, skin removed, cut into strips
  • 2/3 c Pineapple diced
  • ½ tsp Chili Powder
  • 1 Tbsp Shallots minced
  • ½ c yellow onions diced
  • ½ c Zucchini diced
  • Flour to dust
  • Canola oil
  • Salt and Pepper

  • 12 oz Coleson’s Catch Mahimahi Fillets, thawed, skin removed, cut into strips
  • 2/3 c Pineapple diced
  • ½ tsp Chili Powder
  • 1 Tbsp Shallots minced
  • ½ c yellow onions diced
  • ½ c Zucchini diced
  • Flour to dust
  • Canola oil
  • Salt and Pepper
Instructions
  1. Marinate Mahimahi, pineapple, chili powder, shallots, salt and pepper for 2 hours.    
  2. Remove Mahimahi and pat dry. Dust with flour and sauté, set aside.
  3. Sauté the onion until golden, add the pineapple mixture and zucchini bring to a boil.
  4. Add the Mahimahi, stir gently and simmer for one minute.
  5. Serve with rice.

  • For Fish:
  • 12 oz pkg Coleson’s Catch Mahimahi Fillets,
  • 1 Tbsp garlic Minced
  • 2 Tbsp Red Onion Minced
  • 2 Tbsp balsamic vinegar
  • 1 tsp olive oil
  • Salt and Pepper to taste
  • 4 pcs Wrap-style Flour Tortillas any flavor
  • For Dressing:
  • 1/4 c balsamic vinegar
  • 1/4 c water
  • Salt and Pepper to taste
  • 2 Tbsp brown sugar
  • 1/4 c Red Onion Diced
  • 1/4 c olive oil
  • For Salad:
  • 3 qts Washed and Dried Spinach* (seems like a lot but it shrinks)
  • 1/2 c Red Onion Diced
  • 2/3 c Tomato Diced
  • 1/2 c grated carrot

  • 1 tsp olive oil
  • Salt and Pepper to taste
  • 4 pcs Wrap-style Flour Tortillas any flavor
  • For Dressing:
  • 1/4 c balsamic vinegar
  • 1/4 c water
  • Salt and Pepper to taste
  • 2 Tbsp brown sugar
  • 1/4 c Red Onion Diced
  • 1/4 c olive oil
  • For Salad:
  • 3 qts Washed and Dried Spinach* (seems like a lot but it shrinks)
  • 1/2 c Red Onion Diced
  • 2/3 c Tomato Diced
  • 1/2 c grated carrot
Instructions
  1. Prepare Fish:
  2. Make a marinade with all "Fish" ingredients above except fish and flour tortilla.
  3. If you are comfortable removing the skin from the fish at this point, you can.
  4. The other option is to grill the fish with the skin on and remove after cooking.
  5. Toss the Mahi-Mahi in the marinade and refrigerate for at least an hour.
  6. Grill the fish -- it will take 6-8 minutes to cook.
  7. Prepare Dressing:
  8. Warm the water and dissolve the salt and sugar and mix in the rest of the "Dressing" ingredients.
  9. When you are ready to assemble the wrap, heat the dressing either in the microwave (glass container), on the grill (metal container), or on the stove (saucepan).
  10. Prepare Salad:
  11. Place items in a bowl large enough to toss easily.
  12. Assemble Dish:
  13. Have all your items assembled around you, including plates to put finished items on.
  14. Pour half the hot dressing over the greens and toss.
  15. Adjust the dressing amount to your taste.
  16. Spread out the tortillas and divide the greens amongst them; if it seems light on the greens to you, add more.
  17. Cut the skinless Mahi-Mahi into thin strips and divide amongst the tortillas.
  18. Make wraps by tucking in the sides and rolling forward tightly.
Recipe Notes

Serving Suggestions:

For a heartier meal use 2 pkgs Mahi-Mahi and double the seasonings.

Additional Comments:

Use any combination of greens you enjoy. For those new to using greens, spinach is a pretty "safe" one. Some of the greens can be bitter; many people enjoy the bitterness, but not all.
