Slipper Lobster Tail with Roasted Butternut Squash

Ingredients

  • 1 pkg Coleson's Catch Slipper Lobster Tail split
  • 2 Tbsp Butter melted
  • 1/4 tsp Nutmeg
  • Salt and Pepper
  • 2 c Butternut Squash peeled & diced
  • 2 Tbsp Butter melted
  • 1/2 tsp Nutmeg

Instructions

  • Toss diced squash with salt, pepper, nutmeg and butter.
  • Put on a sheet pan large enough to be a single layer.
  • Bake at 400°F until golden brown about 20 minutes.
  • Sprinkle salt, pepper and nutmeg on the lobster meat and brush with butter.
  • If possible cook lobster tail over an open flame or bake with the squash except that it will not take 20 minutes more like 10-12.
  • Serve with side salad.

Slipper Lobster Tail Club Sandwich

Ingredients

  • 1 pkg Coleson's Catch Slipper Lobster Tail
  • 4 slices Bread of your choice toasted sourdough maybe
  • Tomatoes sliced
  • Lettuce of your choice
  • Avocado
  • 8 slices bacon cooked the way you like it
  • Your choice of spread: Mayonnaise, thousand island, lemon pepper mayonnaise, cocktail sauce 

Instructions

  • Steam or boil the lobster in the shell 5 minutes or so. Chill the tails.
  • When ready remove from shells and slice. Assemble.
  • Serve with clam chowder.

Seafood Cioppino with Imitation Crabmeat

Ingredients

  • Marinara sauce:
  • 1 can Tomatoes diced or crushed
  • 2 Tbsp. olive oil
  • 2 Tbsp. garlic chopped
  • 2 Tbsp. Basil chopped
  • 1/2 Onion chopped

Instructions

  • Sauté all ingredients except the tomatoes.
  • Add the tomatoes and simmer for 20 minutes or longer.
  • Add fish of any kind as desired, cutting it into stew size pieces.
  • Add crabmeat.
  • Simmer until fish is done.
  • Serve with garlic bread.

Notes

Variation: make the marinara as spicy as you like it, add any shellfish as well. In a hurry? There are many jarred sauces available.

Baked Acorn Squash and Imitation Crab

Ingredients

  • 4 Acorn Squash
  • 8 oz. Coleson's Catch Imitation Crab Meat
  • 2 cups Italian seasoned bread crumbs
  • 1 Tbsp. garlic minced
  • 1/4 c red and green bell pepper each diced
  • 1/4 c Onion minced
  • 2 Tbsp. olive oil
  • 1/2-3/4 c Chicken Stock
  • 1/2 c Parmesan cheese grated

Instructions

  • Sauté the onion, bell peppers and garlic in the olive oil until tender.
  • Toss with the bread crumbs and cheese, add chicken stock to moisten.
  • Flake the crab meat and toss with mixture.
  • Cut the squash in half lengthwise, remove seeds.
  • Deeply score the squash flesh.
  • Sprinkle with salt and pepper.
  • Fill with mixture and place in a baking dish; cover.
  • Bake at 400° for 45 minutes.

Notes

This delicious, healthy and easy to prepare recipe is also excellent for other Coleson's Catch® seafood items like Halibut, Tuna, Mahi-Mahi, Chilean Sea Bass, Swordfish, Orange Roughy and Tilapia. Enjoy!

Scalloped Root Vegetables and Imitation Crabmeat Salad with Chunks or Flakes

Ingredients

  • 1 pkg Coleson's Catch Imitation Crab Meat Chunks
  • 2 c boiling potato peeled and sliced
  • 1 c Carrot peeled and sliced
  • 1 c celery root peeled and sliced
  • 1 c Breadcrumbs
  • 1 c Parmesan cheese
  • 1/2 c Parsley chopped
  • 1 c Heavy Cream

Instructions

  • Oil a shallow casserole dish and layer a third of the vegetables, crabmeat, breadcrumbs, parsley and cheese.
  • Repeat the process, finishing with a layer of breadcrumbs and cheese.
  • Cover with the cream.
  • Bake at 375 degrees for about an hour. If it is getting too brown, cover with foil.
  • It is done when a fork slides easily through the potatoes.
