Halibut with Spicy Tomatoes

Ingredients
- 12 oz Halibut Steaks
- 1 1/2 c. Tomatoes diced
- 1 Tbsp garlic
- 2 Tbsp olive oil
- 1/2 c. Onion diced
- 1 tsp. crushed chilies or 1 jalapeno diced
Instructions
- Sauté onion in olive oil.
- Add tomato, garlic, and chilies.
- Simmer for a couple minutes.
- Adjust seasoning.
Halibut with Southwest Chile Sauce

Halibut with Southwest Chile Sauce
Servings 2 People
Ingredients
- 12 oz. Halibut Steaks
- 1/2 c. cornmeal
- 1/2 c. Onion diced
- 1 tsp. garlic
- 3/4 c. Tomatoes diced
- 2 Tbsp. Chili Powder
- 3/4 c. Chicken stock Salt and pepper
Instructions
- Salt and pepper the Halibut and dust with cornmeal; then sauté.
- Simmer sauce ingredients for 15 to 20 minutes.
- Thicken with roux or cornstarch.
- To make sauce spicy, add crushed chili pepper.
