Imitation Crab And Lentil Stew

Ingredients

  • 1 pkg Coleson's Catch Imitation Crabmeat
  • 2 Tbsp. Oil
  • 1 Yellow Onion small diced
  • 2 Tbsp. garlic minced
  • 1/2 tsp. Saffron
  • 2/3 c dried lentils
  • 3 c Chicken Stock
  • 2/3 c Tomatoes diced
  • 1/4 c Cilantro chopped
  • 3 Tbsp. Lemon Juice
  • Salt and Pepper

Instructions

  • Sauté the onion until tender, add garlic and gently cook; do not brown.
  • Add saffron, chicken stock and lentils.
  • Simmer until lentils are tender (20-30 minutes).
  • Add tomatoes, cilantro and lemon juice, simmer for 5 minutes.
  • Add flaked crab and bring to a boil.
  • Adjust seasoning.

Notes

Additional Comments: This delicious, healthy and easy to prepare recipe is also excellent for other Coleson's Catch® seafood items like Halibut, Tuna, Mahi-Mahi, Chilean Sea Bass, Swordfish, Orange Roughy and Tilapia. Enjoy!

Baked Acorn Squash and Imitation Crab

Ingredients

  • 4 Acorn Squash
  • 8 oz. Coleson's Catch Imitation Crab Meat
  • 2 cups Italian seasoned bread crumbs
  • 1 Tbsp. garlic minced
  • 1/4 c red and green bell pepper each diced
  • 1/4 c Onion minced
  • 2 Tbsp. olive oil
  • 1/2-3/4 c Chicken Stock
  • 1/2 c Parmesan cheese grated

Instructions

  • Sauté the onion, bell peppers and garlic in the olive oil until tender.
  • Toss with the bread crumbs and cheese, add chicken stock to moisten.
  • Flake the crab meat and toss with mixture.
  • Cut the squash in half lengthwise, remove seeds.
  • Deeply score the squash flesh.
  • Sprinkle with salt and pepper.
  • Fill with mixture and place in a baking dish; cover.
  • Bake at 400° for 45 minutes.

Ingredients

  • 12 oz pkg Coleson's Catch Imitation Crab Flakes
  • Sandwich Filling:
  • 8 oz creamy style goat cheese
  • 1/2 c Red Onion diced
  • 1/2 c sun dried tomato diced
  • 2 Tbsp Basil chopped
  • 1 Tbsp garlic chopped
  • 1 Tbsp Lemon Juice
  • 1/4 tsp Salt and Pepper
  • Sandwich ingredients:
  • ice burg lettuce Shredded
  • Tomatoes Sliced
  • Hearty bread of choice

Instructions

  • Combine the crab meat with the ingredients.

Notes

These hold up well in an ice chest.

Greek Style Imitation Crab Pita

Ingredients

  • 12 oz pkg. Coleson's Catch Imitation Crab Flakes
  • 1/2 c Lemon Juice
  • 1/4 c Olive oil
  • 1 tsp Garlic chopped
  • 1/4 c Basil chopped
  • 1/4 c Kalamata olives chopped
  • 1/2 c Cucumber diced
  • 1/2 c Tomatoes diced
  • 1 c Crumbled feta cheese

Instructions

  • Toss all items and chill for 24 hours.
  • If transporting, keep mixture in a sealed container in an ice chest and when ready, place the ingredients in the pita bread.
