Asian Style Imitation Crab Pasta Salad

  • 12 oz pkg Coleson's Catch Imitation Crab Meat
  • 4 c cooked Lo Mein noodles
  • 2 c Combination of Vegetables (scallion bell pepper, carrot, celery, bamboo shoots, water chestnuts), julienned
  • 1/4 c Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp garlic chopped 
  • 1 tsp Fresh Ginger grated 
  • 1/2 c peanut or corn oil
  • 1/2 c Peanuts chopped

Instructions
  1. Make the dressing with the soy sauce, sesame oil, ginger, and garlic; toss in all the ingredients. Chill.

  • 4 Acorn Squash
  • 8 oz. Coleson's Catch Imitation Crab Meat
  • 2 cups Italian seasoned bread crumbs
  • 1 Tbsp. garlic minced
  • 1/4 c red and green bell pepper each diced
  • 1/4 c Onion minced
  • 2 Tbsp. olive oil
  • 1/2-3/4 c Chicken Stock
  • 1/2 c Parmesan cheese grated

  • 4 Acorn Squash
  • 8 oz. Coleson's Catch Imitation Crab Meat
  • 2 cups Italian seasoned bread crumbs
  • 1 Tbsp. garlic minced
  • 1/4 c red and green bell pepper each diced
  • 1/4 c Onion minced
  • 2 Tbsp. olive oil
  • 1/2-3/4 c Chicken Stock
  • 1/2 c Parmesan cheese grated
Instructions
  1. Sauté the onion, bell peppers and garlic in the olive oil until tender.
  2. Toss with the bread crumbs and cheese, add chicken stock to moisten.
  3. Flake the crab meat and toss with mixture.
  4. Cut the squash in half lengthwise, remove seeds.
  5. Deeply score the squash flesh.
  6. Sprinkle with salt and pepper.
  7. Fill with mixture and place in a baking dish; cover.
  8. Bake at 400° for 45 minutes.

  • 2/3 c Iceberg Lettuce shredded 
  • 1 Tomato sliced
  • Munster Cheese sliced
  • Bread of your choice

  • 1/2 c Avocado diced
  • 1/2 c Black Olives sliced 
  • 1/2 c Thousand Island dressing
  • Cheddar Cheese shredded or sliced to top
  • 4 slices Sour Dough Bread toasted
  • Parsley chopped

  • 2 Tbsp Red Onion diced 
  • 1/2 c Tomatoes diced 
  • 1/2 c Avocado diced

  • Cheddar Cheese shredded or sliced to top
  • 4 slices Sour Dough Bread toasted
  • Parsley chopped
Instructions
  1. Gently mix all ingredients except cheese, bread and parsley.
  2. Divide the mixture onto the toasted bread and top generously with the cheese.
  3. Pop into a toaster oven or oven until cheese is very bubbly.
  4. Top with the parsley.
