Orange Roughy Fillets with Lemon Butter

Ingredients
- 1 pkg Coleson's Catch Orange Roughy Fillets
- 1/4 lb. of Salted Butter
- 2 Tbsp. Lemon Juice
- 2 Tbsp. Parsley chopped
- 1/4 tsp. pepper
Instructions
- In a mixer, whip the butter and add the lemon juice, parsley and pepper.
- Place the flavored butter on a piece of wax paper and roll to form a small log. Chill.
- Slice the butter into circles and place atop the fish.
- Then cook the fish any style as desired (bake, broil or sauté).
