Swiss Cheese, Red Onion and Champagne Vinegar
- 1 cup Swiss cheese diced (1/2 inch)
- 1/3 c Red Onion diced
- 1/4 c Cornichons chopped, gherkins
- 1 Tbsp Champagne Vinegar
- 2 Tbsp olive oil
- 1 tsp Stone Ground Mustard
- Salt and Pepper
- Combine and toss immediately--should be used right away.
